Changwon Bukmyeon gukbap restaurant for dinner: Myeongin

A Changwon Bukmyeon Hot Spring restaurant I was craving hard for dinner after work. I'd found this place before while searching for lunch near the hot spring with my family — this time I came back for dinner.

Unlike other places that use pre-made soup packs, the owner here simmers domestic pork bone broth from scratch, which builds real trust. Myeongin Dwaeji Gukbap is loved by locals for family and group gatherings too, but I came for suyuk baekban, sundae gukbap, and dwaeji gukbap.

Myeongin Dwaeji Gukbap sits at 897 Cheonju-ro, Bukmyeon, Uichang-gu, Changwon, Gyeongnam, about a 5-minute drive from Bukmyeon Hot Spring, right on the main road. A big sign reads Myeongin Dwaeji Gukbap, and parking stretches wide both in front of and beside the restaurant.

It's a good Changwon gukbap spot to remember whether you're heading to or from Bukmyeon Hot Spring or the Bukmyeon golf course, whenever you're stuck on where to get a hearty lunch or meal for the whole family.

There's a sink right at the entrance so you can wash your hands as you come in, and there's a sign reminding golfers heading to Bukmyeon golf course to grab a drink — seems like a lot of them stop by for breakfast or lunch.

Seating at Myeongin Dwaeji Gukbap: high-backed partition tables for solo diners and groups

The inside is quite spacious, and the tables have high backs that work as partitions, which made for a nice private meal. Especially good news for anyone passing through Bukmyeon who wants a solo bowl of hot pork soup without worrying about the next table over — an easy stop when you need a hearty meal.

There are also separate tables set up for groups. Sipping soju over suyuk at Myeongin Dwaeji Gukbap with a group or family gathering — just thinking about it puts me in a good mood.

True to a proper Changwon dwaeji gukbap specialist, the menu is compact — just soup, sundae, and suyuk. But it's not sparse in a bad way; if anything, it gives off that focused, specialist air, you know?

On top of that, there's a sign saying a solo diner gets one extra bowl of rice free — it really gives the feeling that the owner is generous about feeding the neighborhood a proper meal.

The banchan: almond-topped mu-mallaengi and gangdoenjang lettuce wraps

The basic banchan came out after we ordered. Usually at a gukbap place, the banchan is just kimchi, kkakdugi, chili peppers, and ssamjang — that's it. But the banchan at Myeongin Dwaeji Gukbap, known locally as a lunch spot near Bukmyeon Hot Spring, is on a different level.

Baechu kimchi and mu-mallaengi (dried radish strips). The mu-mallaengi was topped with sliced almonds — extra nutty crunch with every bite. And the freshly tossed buchu-muchim (chive salad) works great as a stand-alone appetizer that wakes up your appetite, or tossed right into the soup — totally my kind of thing.

Lettuce and gangdoenjang also came out — the gangdoenjang here is a genuine rice thief. Wrap it in lettuce with rice and a whole bowl of rice just disappears. But wrap it with suyuk instead, and that's a straight ticket to heaven, haha.

What we ordered: dwaeji gukbap, suyuk baekban and sundae gukbap

We ordered one dwaeji gukbap, one suyuk baekban, and one sundae gukbap.

The suyuk that came with the baekban — is this really just one serving? It was genuinely generous, looked about as much as a small suyuk order on its own. Boiled so tender with no gamey smell at all, and dipped in gangdoenjang it's heaven, haha.

The sundae gukbap. The broth wasn't seasoned, so I added salt, pepper, and minced chives. Tried a piece of sundae first — a slight taste of meat sundae plus a bit of chewy chapssal (glutinous rice) sundae too. Just delicious.

Usually suyuk baekban doesn't come with much meat, but this one had several good pieces, making it a genuinely filling meal — a must-stop Changwon dwaeji gukbap spot near Bukmyeon Hot Spring. (Somyeon noodles are also unlimited refill.)

Wrapping a piece of suyuk neatly in fresh lettuce made for such a happy bite — sharing a delicious meal like this with family, isn't that exactly what small happiness is about?
