Today I'm writing up a review of Ungjin Dalseo Dwaeji Gukbap near Gwangjang Coa in Gamsam-dong, Dalseo — the signature pork gukbap (pork bone soup) is simmered for 1,080 minutes in a cauldron with domestic beef bone broth and refrigerated Korean pork foreleg, and even the fresh-tossed kimchi and cubed radish kimchi made daily are delicious!

Wow.. it was a weekday but almost fully packed! There were like 3 seats left in a corner so I only took interior photos of that spot,, with customers bustling around, it had that real hidden-gem smell~~~!

These are the basic side dishes. At a gukbap restaurant, the kimchi and radish kimchi really matter — crisp yet properly fermented, they paired so well with the rich broth that I kept reaching for more~ they were so good I definitely needed a refill haha

They said the big piece of meat on top of the gukbap tastes best wrapped in chives, like boiled pork (suyuk)!

Before seasoning with salted shrimp, I tasted the plain broth first — no extract or powder used, just beef bones simmered multiple times, and you could really taste the effort put into the broth!!! The deep, savory flavor unique to bone broth was so good👍🏻

Now with just the right amount of salted shrimp for seasoning, wow,,the umami got even better🥺

At first I just ate the gukbap on its own, but mixing in rice halfway through and taking a big bite with the meat filled me up completely — it worked great as a full meal, and it seemed like it would also be perfect as a hangover cure if you'd had drinks the night before!

How is the lean-meat gukbap different?

We ordered one basic gukbap and one lean-meat version, and it was a whole different flavor🤩🤩 a gukbap where you could feel the meat's clean, lighter taste even more? Try the lean-meat version depending on your preference too!!haha

Next up is the bite-size sundae (blood sausage)! It came in easy-to-eat bite-size pieces so it was great to pick up without any hassle, and you could really taste the clean, nutty flavor unique to sundae!

Dipping it lightly into the house-made chive salt served alongside was especially good — a salty flavor with a fragrant hint of chive came through completely! It's tasty on its own, but I really recommend trying it with the chive salt at least once!
