As the weather started turning cooler, I really craved a hot bowl of soup, so I went to Pho Witch, a pho spot near the Pyeongchon academy district in Anyang, and had pho, pad thai and banh mi.

So let me start my review of Pho Witch, where parking was also nice and easy~

Pho Witch is run by a sibling duo. It's such a popular pho spot in Anyang that there's a wait at peak times. But because tables turn over quickly, you can get in after waiting only about 10 minutes.

Walking in, the gentle scent of pho filled the air! With posters giving it a local feel, it almost felt like I'd traveled abroad~

Pho Witch has a variety of dishes, including pho and fried rice. They also have several set menus, so you can enjoy a number of dishes at once. Watching the tables around me, it seemed like the most popular items at Pho Witch were the pho, the pad thai, and the banh mi.

On top of that, Pho Witch's banh mi is apparently so good it's named 'Banmichyeotda' (crazy-good banh mi)! Curious about the taste, I ordered it along with pho and pad thai.

They serve pickled radish and pickled onion as basic side dishes, and if you ask for cilantro separately, they bring it out on its own plate — such a thoughtful touch!

After about 10 minutes, the dishes finally arrived! Wanting to try a variety of things, I ordered a generous spread of pho, pad thai and banh mi.

How is the pho at Pho Witch? A clear, deep broth

First up, let me introduce the hot pho that comes to mind first when you think of Vietnamese food.

The broth was so clear and deep, it would be perfect as a hangover cure the day after drinking.

I figured you'd be curious about the amount of noodles, so I got it on video too. Under the bean sprouts, the noodles were packed in generously.

The soft rice noodles, savory meat and crisp bean sprouts all came together for a pho that left me feeling full and satisfied~ There's also hoisin sauce available if you'd like to add it to taste.

Next up, the pad thai! Pad thai is a famous Thai dish, and I was pleasantly surprised to see it on the menu at a pho restaurant, so I ordered it.

The pad thai came with crushed peanuts and crispy onion chips that really brought out its nutty flavor! There were also plump whole shrimp inside, which gave it great texture.

The noodles were well stir-fried in a sweet-and-salty sauce that soaked in nicely — it was really delicious!

Sprinkling on some red pepper flakes or eating it with cilantro brings out a different flavor, so I'd recommend trying it a few different ways.

Why is the banh mi called 'Banmichyeotda'?

Finally, Pho Witch's signature banh mi! Inside the baguette was a generous filling of sweet and salty charcoal-grilled meat and vegetables!

The bread was the very definition of crispy outside, soft inside, and the aroma of the charcoal-grilled meat soaked nicely between the layers of bread — the combination was really great.

On top of that, the crunchy vegetables and the umami sauce held the whole thing together, and I felt like I understood exactly why Pho Witch's banh mi is called 'Banmichyeotda'~
