As you can see from the signage at the entrance and inside, this place uses only fresh domestic trotters delivered the same day. Their principle is to boil everything in-house every day and sell it the same day, so there's no jokbal smell whatsoever — the skin comes out chewy and the meat comes out tender.
The jokbal boiled today tastes best today.
True to that line, I got to try jokbal that was warm and freshly boiled, and it was seriously satisfying!
