We had errands around Giheung that day and stopped in, and the food turned out to be more interesting than I expected, so I wanted to share it.

What stood out was that you don't just start with kalguksu (knife-cut noodle soup) — it's a course that goes chadol (beef brisket) and minari (water dropwort) → shabu-shabu → hand-pulled kalguksu → fried rice, so it ended up being a pretty full meal.

This place is already famous among Giheung Outlet-area restaurants, so expect a wait at weekend lunch and dinner. But the restaurant is so large with so many tables that it seems to move through the line pretty fast!

We'd been shopping at the Giheung Outlet and got there really late, almost at the order cutoff time, and there were still so many customers even that late!

We ordered the chadol minari-ssam shabu kalguksu and the whole shrimp seafood pancake.

Chadol minari-ssam shabu kalguksu is Jangwongap Kalguksu's signature dish, going from chadol, minari, vegetables and mushrooms all the way to hand-pulled kalguksu and perilla oil kkakdugi (radish kimchi) fried rice. It's ₩15,500, and the whole shrimp seafood pancake is ₩13,500.

For the shabu kalguksu course itself, it's ₩10,000 per person for the 4-item course and ₩12,000 per person for the 5-item course. (The 4-item course doesn't include shabu meat.)

Here's the fun, distinctive part of Jangwongap Kalguksu — instead of just eating the chadol shabu-shabu style, you wrap the chadol in fresh minari. Then dip it lightly in sesame oil.

It's great dipped in the sesame oil sauce too!! I topped mine with hairtail jeot (salted fermented fish) and it was even better~!

Once you've had your fill of chadol and minari, it's time for the actual kalguksu. Jangwongap Kalguksu features hand-pulled noodles kneaded a thousand times, based on a 60-year noodle-making tradition.

The way the noodles stretch when you lift them is pretty impressive — this is really something better captured on video than in photos. Kalguksu that shows you what truly chewy noodles are :)

Apparently the texture changes as time passes. At first there's a chewy bite, and as they cook a bit more in the broth, they get softer. Try it at 5, 8, and 10-minute marks~!! So rather than adding all the noodles at once, adding them a bit at a time lets you notice the texture change.

And try one strand dipped in the sesame oil sauce. Whoa... what is this....??? I ended up mixing all my leftover kalguksu with the remaining sesame oil sauce!

Uiseong garlic kimchi, the side that ties the meal together

Kalguksu really does need kimchi. At Jangwongap Kalguksu you can pair it with Uiseong garlic kimchi. A bite of kalguksu followed by kimchi cleans your palate nicely.

You can grab extra kimchi from the self-service corner! And leftover pancake can be packed to go!! The combo of a brothy noodle dish and kimchi is hard to get wrong.

And the side we ordered — the whole shrimp seafood pancake. True to its name, it's loaded with whole shrimp, squid, octopus, and more seafood. A good dish to add if just ordering kalguksu feels like not enough.

Cutting into the pancake, you can really see the seafood packed inside — such a satisfying bite!!! >.< Crispy outside, soft inside~! We had it alongside the chadol minari-ssam shabu kalguksu, and going back and forth between the warm kalguksu broth and the crispy seafood pancake worked really well as a combo.

The final course of the shabu kalguksu is perilla oil kkakdugi fried rice. After the meat, vegetables, and kalguksu, finishing with fried rice makes the whole meal feel complete.

The nutty aroma of perilla oil combined with the crisp, tangy kkakdugi gave it a totally different flavor from the kalguksu to end the meal on.

We only ordered one chadol minari-ssam shabu kalguksu, but going through chadol → minari → shabu → kalguksu → fried rice made it feel like we'd tasted several different dishes.

With plenty of parking and a spacious restaurant, it seemed like a good fit for visiting with kids or dining as a group. Most of all, it wasn't like a typical bowl of kalguksu. Chadol and fresh minari first, then hand-pulled kalguksu, and finally perilla oil kkakdugi fried rice — Jangwongap Kalguksu Yongin Giheung Branch made for a fun, step-by-step meal within a single order.

After eating, there was misugaru, coffee, and all kinds of puffed rice snacks, every variety~!
