Where Gang Galbitang Seomyeon is and its opening hours

Gang Galbitang is a galbitang (short rib soup) restaurant on Saessak-ro in Seomyeon, Busan. It's open Mon–Sun 9:20 AM–9:00 PM, with a break time from 3:00 PM–4:00 PM (last order 8:20 PM). Before heading out to Bujeon Market in Seomyeon — gotta eat before you sightsee, haha — I stopped by Gang Galbitang for a solid weekend lunch. Here's my post about it!

The rib noodles come with a rich broth, chewy noodles, and tender ribs — a hearty combo. If you love noodle dishes, I'd definitely recommend it!

Galbitang works well as a solo meal, but it's also easy to enjoy with friends or family

Since the place is near a tourist area, there were a lot of foreign customers having breakfast in Seomyeon too~ (K-food wave!)

Gang Galbitang also sells a non-cooked mealkit! You get ₩500 off if you buy it after dining in the restaurant, and it's also available on Naver Smart Store.

There's also aronsatae (beef shank) suyuk on the menu, which would go great with daytime drinking, haha

They say everything is done by hand, and fresh Hanwoo (Korean beef) bones are simmered every morning, giving the broth a deep, rich flavor!

The restaurant is fairly small, but there were quite a lot of customers. Even so, the turnover seemed pretty good!

A dish that people of all ages tend to love. Rather than strong or spicy seasoning, its strength is being able to eat warm broth and meat together

The chosuk-jam (Chinese artichoke, also called 'ground silkworm') pickles have an appealing crunchy texture (apparently a root vegetable good for preventing dementia)

Time to tear into the meat? (nom nom) Soft and easy to cut through~ tender enough that you can finish a whole bowl in no time, haha

Once I picked the meat off the bone and had it with the broth, it was the kind of flavor that calls for white rice! (come on~ rice)

What are the Jeju medium noodles in the Gang Galbi Noodles?

The rib noodles come with a mini bowl of rice on the side. Instead, there's a generous amount of Jeju noodles in the bowl!

A familiar yet different combo of chewy noodles and rich rib broth. It's a thick noodle, but a bit thinner than udon, haha

Slurping the noodles in the hot galbitang~ eating the tender ribs and noodles together works surprisingly well. There's even saessak-sam (young ginseng sprout) in there! What a health-boosting dish~ dip the ribs in soy sauce and enjoy!

With galbitang, you can eat the broth and meat separately, or mix in rice. Warm broth with meat on top of rice in one bite is savory and satisfying~
