While looking for a place to eat meat in Seomyeon, I visited Gilchon, a charcoal-grilled pork rib specialist. I was curious about a place that sells hand-cut pork ribs at such reasonable prices, so I decided to order a variety of dishes to try — fresh pork ribs, marinated pork ribs, and even some unusual side menu items.

Is there room for groups inside Gilchon Sutbul Galbi?

Walking into Gilchon Sutbul Galbi Seomyeon Main Branch, I immediately felt the lively energy typical of a BBQ restaurant. The center seating and wall-side tables were separated with high partitions, making it comfortable to eat, and there was also group seating in the back for larger parties.

Each table had an ordering tablet, which made it easy to add more menu items. Customers filled up quickly during dinner hours, so making a reservation before visiting seems like a good idea.

Considering there's no separate table fee, this is quite reasonable pricing for the heart of Seomyeon. We ordered both types of ribs, plus cheese toast, cheese fried rice, and half-and-half naengmyeon.

The basic side dishes included lettuce, perilla leaves, chopped green onions, pickled radish, and potato salad. The crunchy pickled garlic stems and barley baek-kimchi (white kimchi) paired well with the rich pork ribs.

In particular, the soft potato salad had a subtle truffle scent, which was unique. With ssamjang (dipping sauce), spicy sauce, and wasabi all on offer, there were plenty of ways to enjoy the meat.

How thick are the fresh pork ribs?

First, we put the fresh pork ribs on the grill. The long bones had thick meat with just the right amount of fat evenly distributed. As they grilled to a golden brown over the charcoal, a rich, savory meat aroma rose up.

After cutting them into bite-sized pieces and cooking a bit longer, the surface took on an appetizing color. The lean meat was clean and tender, while the fatty parts were chewy and savory. With just a touch of salt or wasabi, the natural flavor of the meat really came through.

The long bones also had plenty of meat attached, making them fun to pick at and gnaw on. Overall, this was a very satisfying plate of fresh pork ribs.

While eating the meat, we also tried the cheese toast. It came with a slice of cheddar cheese on top of the bread, along with a spicy mala sauce.

The mala flavor wasn't too overpowering — just enough to cut through the richness. It's a combination you don't often see at a BBQ restaurant, so it's worth ordering at least once.

Marinated pork ribs that aren't too sweet

Next, we grilled the marinated pork ribs. The wide, hand-cut meat was well-coated in marinade, with a good ratio of lean meat to fat. As soon as it hit the charcoal, a sweetish marinade aroma mixed with the savory smell of grilling meat. Since marinated ribs burn easily, we flipped them often and cooked them slowly.

The well-cooked meat had a nice sheen, and the marinade wasn't too sweet or salty. The familiar sweet flavor of marinated pork ribs, combined with the charcoal aroma, kept us reaching for more. Paired with chopped green onions or barley baek-kimchi, it was easy to eat without getting tired of the flavor.

Even after eating plenty of meat, we still had room for more, so we ordered cheese fried rice. It looked great right from the start, with a long stretch of melted cheese in the middle of the spicy fried rice.

Scooping up a big spoonful made the cheese stretch, and I couldn't help but take a photo. The spiciness of the kimchi and the savory cheese blended well, making it a satisfying dish to eat after the meat.

The last dish was half-and-half naengmyeon, which combines mul-naengmyeon (cold noodle soup) and bibim-naengmyeon (spicy mixed cold noodles) in one bowl. I liked this option, since it's perfect for anyone who can't decide on just one.
