A Bangi-dong beef gopchang spot worth the wait if you want intestines packed with gop (offal fat) paired with house-made kimchi.

I had dinner plans with a friend so I went back to a Bangi-dong food alley favorite after a while. There was no question about the menu that day — gopchang~!

There are so many great beef gopchang restaurants in Bangi-dong, but this time I finally visited Jinseong Hanwoo Gopchang, one particularly famous for its long lines, and I'm here to share the review. :) If you're looking for a Bangi-dong restaurant, pay attention.

Jinseong Hanwoo Gopchang in one line

At Jinseong Hanwoo Gopchang, staff grill the domestic hanwoo (Korean beef) gopchang, daechang, and makchang for you directly, so there's no risk of overcooking and you can just relax and eat.

The gopchang was packed with rich gop, and pairing it with three kinds of house-made kimchi and minari (water dropwort) soy sauce was a golden combination that completely cut through the richness.

Jinseong Hanwoo Gopchang Bangi Direct Branch is an 11-minute walk from Jamsil Station Exit 10. It's tucked inside the Bangi-dong food alley, and if you follow the alley in, it's not hard to find.

The exterior already had the vibe of a long-running popular restaurant, and I could spot traces of TV features on the outside of the building too.

You write your name and party size on a waitlist by the entrance while you wait — and even during a regular weeknight dinner hour, you should expect at least a 30-minute wait. On Fridays or weekend peak times it can be about an hour, so if you'd rather skip the wait, I'd recommend going a bit early.

Toward the back, a semi-open kitchen let me catch glimpses of the staff prepping and cooking ingredients.

The Jinseong Hanwoo Gopchang menu was actually pretty simple.

Each is 220g, and all of it is said to be domestic hanwoo. The minimum order is 2 servings, and the two of us ordered one each of gopchang, daechang, and makchang — 3 servings total. After eating, it turned out to be just the right amount to leave two people properly full. At the end, we added kkakdugi (diced radish kimchi) yangbap for ₩9,000 to fill up on rice.

There was also a sign on the table saying "we'll replace it anytime if you're not satisfied," with the head chef's name written directly on it — which felt impressive, like real confidence in the food.

Crunchy seasoned chives side dish

First, the seasoned chives side dish hadn't fully wilted, so it was crunchy, and the tangy seasoning really woke up the palate.

Three kinds of house-made kimchi also came out. The scallion kimchi had a sharp scallion scent followed by a deep, aged umami; the mustard leaf (gat) kimchi had its signature pungent kick and salty flavor that cut through the fattiness of the meat well; and the small radish (altari) kimchi was crunchy with a clean, sour, well-fermented taste.

Personally, the thing I was most curious about was the soy sauce with minari in it. Fragrant minari, sharp garlic, and salty vinegar soy sauce came together so well that I kept dipping into it even on its own.

How did the gopchang, daechang and makchang taste?

A little while later, the gopchang, daechang, and makchang all arrived together on a huge grill plate.

and it looked incredibly hearty just to look at. The staff member set a timer for 5 minutes and said they'd be back when it went off.

While we waited, we ate the steamed egg that came as a side — soft, fluffy and moist, with mild seasoning that kept us going back for more. After 5 minutes, the staff member returned, cut everything into bite-sized pieces, and this time set a 3-minute timer.

Having the time measured so precisely meant there was no worry about burning the food, and it also made it much easier to chat with my friend.

Golden, crisply grilled beef gopchang

Finally, the beef gopchang~! The outside was grilled golden and crisp, and the moment I bit in, the savory gop inside spread softly through my mouth.

The daechang had a plump fat layer that melted into a sweet-leaning, deep richness. The makchang had the springiest texture of the three, and the more I chewed, the more its clean meaty flavor came through.

The bean sprouts and chives stir-fried together on the grill had crunchy vegetables soaked in the rendered fat — savory with a subtle char flavor.

Once the kimchi got grilled on the plate, the sourness softened and the umami got even deeper.

The rice cake was slightly crisp outside and stretchy and chewy inside! The thin potato slices soaked up the oil and turned golden too — a surprisingly delicious extra, haha.

Dipping it deep into the minari soy sauce especially, the rich savoriness of the gop was followed by that fragrant, sharp flavor, which definitely cut down on the richness.

By the time we'd finished most of the meat, we wrapped up with kkakdugi yangbap. The crunch of finely chopped kkakdugi, the chewy squid, and the fluffy rice came together well, giving it a spicy flavor with quite a deep umami.

There was even the pleasure of scraping up the slightly crisped rice at the bottom — if we'd stopped at just the gopchang, we would've really missed out, haha.

Why Jinseong Hanwoo Gopchang is worth the trip to Bangi-dong

Honestly, this isn't a Bangi-dong restaurant with a short wait. But the beef gopchang was generously packed with gop, the staff grilled it for us with a timer for convenience, and the house-made kimchi and minari soy sauce combo cut the richness so well that I somewhat understood why there's a wait.
