Today I'm bringing you a story about a Seongnam bossam (boiled pork wraps) restaurant I stopped by for a quick dinner and ended up way more satisfied than expected — Bossam Ae Kalguksu Sangdaewon Branch. Honestly I went in without high expectations, but once I saw the full spread laid out on the table my expectations shot up, and by the time I finished eating I'd already decided to come back!

Since Bossam Ae Kalguksu Sangdaewon Branch opened not too long ago, the interior was really clean and tidy. The hall is spacious so tables have plenty of room between them, and there are even seats facing the window, which makes it a comfortable structure for people dining solo.

We came on a weekend early evening so it wasn't too crowded — mostly older folks quietly dining in small groups. Watching tables enjoying bossam with a drink on the side, everyone looked pretty satisfied.

The side dishes are two kinds of kimchi — fresh geotjeori and green onion kimchi — and kimchi really matters at a bossam restaurant, doesn't it? The moment it was set down in front of us I took a sniff, and it passed the smell test immediately. It had that well-fermented smell that got me excited before I'd even taken a bite.

The kalguksu comes out anchovy-broth-based and clean, and you cook it yourself at the table. The broth isn't heavy or strong-flavored — it's refreshing and sticks to the basics, which makes it a perfect match to eat alongside bossam.

Later we scooped cheongyang peppers from the salad bar into it, which added a spicy kick that was exactly to our taste. Being able to adjust it to your own preference is a big plus.

Gabrisal bossam: clean, tender pork jowl with no gamey smell

The main dish, the bossam set for one, arrived with gabrisal (pork shoulder blade meat) bossam neatly plated alongside bossam kimchi. Gabrisal's signature trait is that it stays low in fat while keeping its tenderness, so you can eat it in a clean, light way!

I piled some salted shrimp and bossam kimchi on top and took a bite — completely clean and light, with zero gamey smell. You could really taste the meat's own natural flavor without anything overpowering it. People who find fatty food a bit much would probably find this comfortable to eat.

And the green onion kimchi was genuinely delicious. There's a reason people say once you wrap bossam with green onion kimchi, you can't stop — my hand kept reaching for it 😄

Finishing off with a warm bowl of porridge for dessert felt filling yet gentle on the stomach. The combo of bossam followed by porridge is something I highly recommend!

Seafood minari pancake: the dish my wife liked best

The seafood minari (water dropwort) pancake we ordered as a side was unexpectedly amazing quality. They fry it up fresh right after you order, and it comes out super thin and crispy. It was on a completely different level from the pancakes you get at your typical bar. The minari aroma was vivid and it was loaded with seafood, and my wife absolutely loved it.

I was so focused on the bossam that I only grabbed a piece late, and I regretted not ordering more sooner, haha. If you order it as a side alongside the main bossam dish, you can eat quite generously.
