Jangi-dong sundae-guk in Gimpo: handmade sundae with suyuk, Paldam
In short
Paldam Sundae Gimpo Main Branch is a sundae-guk (blood sausage soup) restaurant in Jangi-dong (Seokmo-ri), Gimpo, Gyeonggi, known for its handmade sundae. Arriving a little before Sunday lunch peak meant a CatchTable wait of 2 to 4 parties, and the order was clear sundae-guk, spicy sundae-guk and suyuk (boiled pork slices), plus the self-bar of organ meat and rice. With room for only about 5 cars in front of Paldam Sundae, going earlier than peak time is the easier plan on a weekend.

Trying to figure out what to eat for Sunday lunch, I went with my husband, who loves sundae-guk (blood sausage soup)! This is Paldam Sundae Gimpo Main Branch, in Jangi-dong, Gimpo.
This place is famous for its handmade sundae and sundae-guk, and I'd heard there's a wait on weekends, so we headed over a bit early.
To cut to the conclusion — if you like sundae-guk, this is worth a visit at least once! Instead of the usual glass-noodle sundae, the sausage here is packed with meat and blood, and you can add organ meat and rice on top, making it a really filling Gimpo sundae-guk spot.

How long is the Sunday lunch wait on CatchTable?
Paldam Sundae uses CatchTable to register for the wait. We arrived a bit before Sunday lunch peak, and at that point there were roughly 2–4 parties ahead of us.

Since it's so famous, I thought 'are we in for a long wait...' but the turnover was actually pretty quick! Maybe because sundae-guk meals don't take that long, even with a few parties ahead, tables cleared faster than expected and we didn't wait long to get seated. Since remote queuing is available on CatchTable, check the wait status before you head out during busy hours!
Parking at Paldam Sundae: only about 5 cars on weekends
Paldam Sundae Gimpo Main Branch does have parking in front of the restaurant. That said, it felt like it only fits around 5 cars, so weekend lunchtime parking can be a bit tight.
If you're visiting on a weekend like we did, I'd recommend going slightly before the lunch peak, thinking not just about the wait but about parking too~
Inside Paldam Sundae: clean, roomy and fine for solo diners

Inside, there are several tables, and there's also a spot on one side suited to eating alone, so it looked good both for a family lunch and for solo dining.
The self-bar: free organ meat and extra rice
What stood out most at Paldam Sundae was the self-bar! Order a main dish per person and you can add organ meat and rice from the self-bar.

The basic side dishes are kimchi, kkakdugi (cubed radish kimchi), peppers, and garlic — a lineup that pairs well with sundae-guk. And one of Paldam Sundae's big advantages is being able to add extra organ meat and rice!

The organ meat selection was generous too — liver, lung, and windpipe.

You can add extra rice too, so for big eaters this seems pretty good value!
Suyuk at Paldam Sundae: soft, tender head meat
We ordered a suyuk (boiled pork slices) alongside the sundae-guk. This suyuk was really something!!!!

The meat was really soft and moist, and the parts where fat and lean meat were attached had a nutty flavor that grew the more you chewed... Above all, it was easy to eat without hesitation — the kind of suyuk that makes you think 'wait, this is head meat?' Not a chewy or crunchy cut at all, just soft, nutty pork suyuk!
Personally, I'd recommend ordering one to share alongside the sundae-guk.
Clear sundae-guk: a rich, savory broth
First, the basic clear sundae-guk! Take a spoonful of the broth and it's actually quite rich, more than it looks. But there's almost no trace of the usual pork smell, and the deep, savory flavor of the meat stock really comes through. Not too greasy or heavy? Nope, nope, nope — a sundae-guk that's rich yet goes down clean.

And the ingredients are genuinely generous. The meat isn't just thin, small scraps — there are good chunky pieces, so it's fun picking out the meat as you eat. Haha.
Spicy sundae-guk: a completely different bowl

Usually when a sundae-guk restaurant offers a 'spicy' version, you'd picture the basic sundae-guk with chili paste stirred in to turn it red, right? But Paldam Sundae's spicy sundae-guk feels like an entirely different dish. It's not just the clean clear broth with spicy seasoning added — the broth itself is much richer, and the spicy flavor runs deep too.
It's not just spicy — you can taste the rich pork stock and the deep heat together, which would make it perfect for curing a hangover. I'm not great with spicy food, but I kept reaching for another spoonful...
If you like clear broth, go for the regular sundae-guk; if you like something richer and spicier, go for the spicy version! If there are two of you, ordering one of each and swapping back and forth would be great too.
Why the handmade sundae here is the real thing
Personally, what stuck with me most at Paldam Sundae was the sundae itself! Being famous for its sundae omakase, this isn't just plain glass-noodle sundae — inside, it's packed full of meat and blood, almost like eating a meat sausage.

Take a bite and you first notice the nutty flavor of the meat and the texture of the softly bound filling. The sundae feels like a dish in itself — I thought, 'ah, so this is why it's famous for handmade sundae.'
Final verdict on Paldam Sundae Gimpo Main Branch

Paldam Sundae, the well-known Jangi-dong restaurant we visited for weekend lunch — since it's so famous, I was worried about the wait, but arriving a bit before lunchtime meant only 2–4 parties ahead of us, and with quick turnover, we ate more comfortably than expected.
- Rich, savory clear sundae-guk with almost no pork smell
- Spicy sundae-guk that's clearly different from just adding chili paste
- Handmade sundae packed with meat and blood instead of glass noodles
- Soft, nutty sous-vide head meat suyuk
- Extra organ meat and rice available
- CatchTable waiting available
Personally, I preferred pairing the sundae-guk with a suyuk rather than eating just the soup alone, and if you go with two or more people, I'd recommend ordering one clear and one spicy sundae-guk to compare the two broths.
If you're looking for a hearty bowl of sundae-guk in Gimpo with real sundae inside, Paldam Sundae, a Gimpo sundae-guk spot, is well worth a visit. :)
