Ansan kimchi jjigae restaurant with domestic cabbage: Choburi Gojan
In short
Choburi Kimchi Jjigae Gojan Main Branch is a stone-pot rice and kimchi jjigae (kimchi stew) restaurant in the Gojan new town area of Ansan, Gyeonggi. Single servings are allowed, so this solo lunch was kimchi jjigae with a perilla oil fried egg and golden gardenia stone-pot rice, and the broth simmered with domestic napa cabbage and grade-1 Korean skin-on pork tasted rich and deep. Even the kimchi jeonbyeong (kimchi-filled crepe roll) ordered as a side used Korean kimchi, so Choburi clearly pays attention to its ingredients.

Where is Choburi Kimchi Jjigae Gojan Main Branch in Ansan?
Choburi Kimchi Jjigae Gojan Main Branch is located in the Gojan new town area of Ansan. They say it's a traditional recipe passed down for three generations. Freshly cooked stone-pot rice, and phrases that really hit the spot — that's the exterior of Choburi Kimchi Jjigae.

For the opening-run event, the first 3 teams who visit at 11am get a Bongpyeong chive buckwheat pancake. Definitely worth showing up early for this one.

On top of that, if you visit with 3 or more people between 11:30am and 1pm, you get a Korean pork skin-on meat topping — up to one per table. Can't miss out on that jackpot.
Choburi's kimchi jjigae meal kit has also launched! It's a 2+1 deal, 3 servings total, and skin-on pork kimchi jjigae is ₩20,000. A miracle really — hearty, generous, 3 servings at the price of 2, plus ramyeon noodles thrown in for free. And it seems to ship nationwide.
What makes the broth taste so deep: domestic cabbage and a three-generation recipe
Choburi Kimchi Jjigae Gojan Main Branch spells out its taste secrets right in the store: made fresh daily and sold until gone, made in-house following a recipe passed down for 3 generations, an officially certified Korean pork retailer, and the crispness and refreshing quality of domestic cabbage.

Wait, what?! These days most kimchi jjigae places use Chinese cabbage, but this place uses domestic cabbage. That's a genuinely insane detail. And on top of that, freshly cooked stone-pot rice made with Sindongjin rice. Absolutely game over... this combo just wins outright.
How to cook and eat Choburi's kimchi jjigae at the table
Here's how to eat it the right way. First and most important — follow the cooking setting, stick to the set 6-level heat for 7 minutes. You really only get the true flavor once the stew's liquid has reduced down and you mix everything together. Add the broth later, when you're eating the ramyeon noodles.

Once the burner turns off, simmer gently on low, level 1-2. Mix the freshly cooked stone-pot rice and stew together in a bowl. Adding a fragrant perilla-oil fried egg makes it even tastier. Grab extra rice, side dishes, broth, or an apron from the self-serve bar as needed.

There's also a channel-add event, and you can check out Choburi's food journeys and the owner's stories on Instagram.
Side dishes and buckwheat tea at Choburi
Here are the basic side dishes at Choburi Kimchi Jjigae Gojan Main Branch: seaweed and soy sauce, plus house-made pickled peppers and stir-fried fish cake. Simple, but exactly what you need.

Even the water isn't just plain water — it's a nutty buckwheat tea. Small details like this feel like one of this place's real strengths.

This is the golden gardenia stone-pot rice. Rice refills are free, though one meal order per person is required.

Three things Choburi does better than other kimchi stew restaurants
The three main strengths Choburi Kimchi Jjigae highlights are their special red seasoning, domestic cabbage, and grade-1 Korean pork.

That level of detail just seals it. Absolutely nailed it.
Self-serve bar, ice cream and coffee for dessert
They also have dessert ice cream here — you can enjoy chocolate, strawberry, and vanilla flavors.

Choburi's treating you — dessert coffee is fully stocked too.

Details of the self-serve bar — the pickled peppers mentioned earlier are here, along with stir-fried fish cake. Stone-pot rice is also fully stocked.

Kimchi jjigae for one with a perilla oil fried egg
The perilla oil fried egg, stone-pot rice, and Choburi kimchi jjigae have arrived. Since single servings are possible, solo dining is very doable here.

Is the perilla oil fried egg visual for real? There are a whopping 3 fried eggs, drizzled generously with perilla oil. It looks unbelievably good — basically guaranteed deliciousness. Makes you want to immediately add seaweed flakes, kimchi jjigae, and the fried eggs onto the stone-pot rice and mix it all together right now.

Because it's made with domestic ingredients, this kimchi jjigae is on a whole different level. Just an incredibly good-looking bowl. The broth had real richness and depth. Kimchi jjigae made with domestic ingredients really is different somehow. Plus there were over 10 pieces of meat in there, and since it's skin-on, the texture had a nice bite and great meaty aroma. Korean pork really is the best — our own ingredients win out.
Kimchi jeonbyeong (kimchi crepe roll) ordered as a side
I also ordered the kimchi jeonbyeong (kimchi pancake). Crispy on the outside, with the deep flavor of kimchi inside — and made with domestic kimchi at that.

This too was a worthy side dish, a genuinely commendable menu item. It seems like these days, popular restaurants really pay attention to sourcing their ingredients. That's probably because consumer standards have gotten a lot higher lately. I think this is going to become a trend going forward. It's a good sign.
