Nampo-dong yang gopchang for a lunchtime drink for four: Bupyeong Yang
In short
Bupyeong Yang Gopchang is a yang gopchang (grilled beef tripe and offal) restaurant with a main shop and several annexes on the gopchang street in Nampo-dong, Jung-gu, Busan, right at the entrance to Kkangtong Market. Four friends made Bupyeong Yang Gopchang the first meal of their Busan trip, ordering the large stone-pan seasoned offal in the original flavor with soju-beer mixes for a lunchtime drink, plus a free steamed egg and staff who cut the meat at the table. Even the friend who usually avoids offal finished it without a trace of the smell, which made it a satisfying first stop.

Hi, this is Oh Yes 🍩🍩🍩 Last weekend I went on a 2-night, 3-day Busan trip with friends! After arriving at Busan Station, our first stop was Kkangtong Market. We headed straight there to look around and grab lunch.
While browsing, it became lunchtime before we knew it, and we decided to have a daytime drink with friends haha. Right in front of Kkangtong Market is the Nampo-dong yang gopchang (grilled beef tripe and offal) street, so we decided to go there for lunch. This time we visited Bupyeong Yang Gopchang, one of the famous spots on the street! We properly enjoyed offal and soju-beer mixes as the very first meal of the trip, and all four of us were satisfied, so I'm introducing it as our first Busan food spot.
Where is Bupyeong Yang Gopchang? Right at the Kkangtong Market entrance

Bupyeong Yang Gopchang is so close to the market that you can see the entrance of Kkangtong Market from here.

True to being on the gopchang street, there are really a lot of yang gopchang restaurants nearby. Among them, Bupyeong Yang Gopchang is a big operation with not just a main branch but several annex locations too. Look around and you'll see red signs everywhere — they're all the same Bupyeong Yang Gopchang haha. They also run outdoor tent seating in the evenings, perfect for eating outside on a nice day.
Bupyeong Yang Gopchang menu and ordering the large stone-pan seasoned offal

Bupyeong Yang Gopchang's menu is just 3 options: salt-grilled, stone-pan seasoned, and beef tripe & intestine hot pot. Of these, stone-pan seasoned is the most ordered! It comes in three sizes — small, medium, and large — so it was easy to order according to our group size.

There were four of us, so we ordered the large stone-pan seasoned offal.

While waiting, I looked around the walls and saw a ton of autographs from famous celebrities!
Banchan and the free steamed egg at Bupyeong Yang Gopchang

After ordering, they set out the banchan (side dishes) one by one. Pickled onion, soft tofu, cabbage salad, fresh kimchi — all good side dishes to pair with the offal — plus a warm doenjang jjigae (soybean paste stew) came along too.

And partway through eating, they brought over a free steamed egg too — soft and warm, perfect for curbing hunger while the offal cooked haha.
How do the intestine, tripe and heart taste in the original stone-pan seasoning?

What we ordered was the stone-pan seasoned! There was a spicy option available, but we ordered the original flavor.

The offal, generously coated in red seasoning, came out uncooked, piled high on the stone pan. Thick whole pieces of beef intestine were included, along with tripe, heart, and other parts.

Cooking took about 7 to 8 minutes.

While we just sat waiting, a staff member came over and cut everything into bite-sized pieces with scissors haha.
As it started to gently boil, red seasoning and oil began bubbling up from the center.
As more time passed, more oil kept rising, and as the savory fat from the beef intestine mixed with the red seasoning, even the smell was already delicious!

Once it was fully cooked, we finally dug in — the beef intestine burst with savory fat the moment you bit into it, melting in your mouth, not greasy at all, and the seasoning had soaked in properly. Delicious.

The tripe had a chewy, squeaky texture, and the heart was chewy in a different way from the beef intestine — a charm all its own. One friend usually can't eat parts like beef intestine, tripe, or gopchang, but here there was no smell at all, and she ate it up saying it was really good!

The stone-pan seasoned wasn't very spicy, more sweet and savory with a rich umami taste, so we kept reaching for more. Our friends tried it too and all agreed the seasoning was seriously delicious haha.
Yang gopchang with soju-beer: the lunchtime drinking combo in Nampo-dong

And with soju-beer mixes on top! Daytime drinking with yang gopchang was truly the perfect combo.

At first, with all that red seasoning and visible oil, I thought it might be a bit greasy, but once we actually ate it, the spicy kick of the seasoning balanced it out, and we kept eating more than expected.

Onion, mushroom, and potato were mixed in here and there too, perfect for picking up along with the meat.

The inside of the restaurant was spacious and clean, and above all, the staff were really friendly — I loved that! If you're looking for a good restaurant on the Nampo-dong yang gopchang street, definitely visit Bupyeong Yang Gopchang.
