I went out for a great sushi meal with family members who absolutely love sushi. Every branch of Sushi Doku I've been to has been delicious, friendly and full of good service. Let me introduce this lovely spot.

What Sushi Doku The Songdo looks like, and the 17:00 Saturday wait

Sushi Doku The Songdo is a sushi set restaurant on the 2nd floor of Onesta Mall in Songdo, Incheon. The interior is quiet and upscale, and even though we walked in right as the Saturday 5pm break time ended, there was already a wait. It's clearly a very popular spot.

Sushi Doku The Songdo menu: the 10-piece premium sushi set at 25,900 won

Sushi Doku has set menus, sashimi menus and more — the variety of set menus makes it fun just picking one. We ordered two 10pcs premium sushi sets at ₩25,900 each. It came generously loaded with not just sushi but udon, truffle chawanmushi, salad and tempura too.

Both sets arrived together, and I was genuinely surprised at how stunning they looked the moment I saw them. This isn't just raw fish plopped onto rice — the knife work on each piece was delicate. The whole visual just made me happy the second I saw it.

The variety of sushi was generous too — and instead of padding out the piece count with cheap fillers like egg or fried tofu, the set was filled with sushi made from pricier cuts, which made it really satisfying. The red shrimp sushi in particular is a piece you rarely see, and it was fresh and springy — I loved it.

Sides in the set: truffle chawanmushi and bonito-flake udon

Sushi Doku The Songdo's premium sushi set was gorgeous down to the side dishes — a nutty perilla-dressing salad, pickled radish and ginger, truffle chawanmushi, and udon with a rich bonito flake flavor. The truffle chawanmushi in particular, with its luxurious truffle aroma, was delicious.

Inside the beautifully smooth chawanmushi there was even springy shrimp, so both the truffle and shrimp aromas came through clearly. The tempura was crispy and pleasantly salty too. And the udon broth was so rich it was hard to believe it was just the standard set udon.

How the soy sauce brush works, and ordering sushi without wasabi

At Sushi Doku The Songdo, you get a hygienic soy sauce brush so you can evenly brush soy sauce onto your sushi. It's more convenient than picking up the sushi with chopsticks to dip it, and it feels like it keeps the flavor balance better too.

Interestingly, you can choose to order the sushi without wasabi. Since you can mix wasabi into the soy sauce and brush it on instead, the aroma spreads evenly, so skipping the wasabi in the sushi itself worked out fine!

Flounder, salmon, and snow crab meat sushi. The flounder in particular, with its delicately scored cuts, was soft and richly savory. The salmon had that deep flavor of something aged, and the snow crab meat's salty crab aroma was satisfying too.

Squid, red shrimp. Chewy and springy squid! The fresh texture was really delicious. As mentioned above, red shrimp sushi rarely shows up in a standard set, and it was springy and chewy.

The akami had a lovely tang! The tuna flesh's acidity and meaty aroma were rich and fresh, and the sweet shrimp was sweet and bouncy the moment I bit into it — pure happiness in the mouth.

Chewy eel sushi with deeply seasoned sauce, and then the ankimo! Personally, the rich, nutty ankimo sushi was the best. Even though ankimo is a premium cut, it was piled on generously, filling my mouth in the most satisfying way. If you're looking for a clean, delicious sushi restaurant in Songdo, I highly recommend Sushi Doku. Every branch I've been to has consistently great sushi quality.
