Suwon Chinese restaurant with open-kitchen duck carving: Gang's Duck

In short

Gang's Duck is a Peking duck specialist Chinese restaurant in Ingye-dong, Suwon, near Suwon City Hall Station. A couple booked a table and ordered half a Peking duck (39,000 won) plus Peking duck fried rice, watching the chef at the open kitchen separate the bird into meat and skin right in front of them. The skin came with pink salt, the meat went into wheat pancakes and the leftover bones were fried into chips, so two people worked through a full duck's worth without waste.

Craving Peking duck in Ingye-dong, Suwon, I looked around and found a Chinese restaurant called Gang's Duck. Peking duck is usually something you'd only expect at hotels or pricey Chinese restaurants, but this place had a relatively relaxed vibe, so I made a reservation and headed over.

Where is Gang's Duck, and what are the opening hours?

Gang's Duck menu and Peking duck instruction sheet

Here's the menu and instruction sheet. It laid out the proper order for enjoying Peking duck — dip the skin in salt first, then wrap the duck meat, scallion, cucumber and yajang sauce in the wheat pancake.

The basic side dishes came out with julienned scallion and cucumber, yajang sauce, and pink salt. The wheat pancakes were also served warm and steamed, ready to be peeled off thin, one sheet at a time.

How does the Peking duck fried rice at Gang's Duck taste?

The Peking duck fried rice arrived first.

Mixing it with a spoon, you could taste and feel the duck meat with a savory flavor. The rice grains weren't clumpy and were fried just right — the kind of flavor both my husband and I love!

Watching the chef carve the duck at the open kitchen

I could see the chef carving the duck right in the middle of the open kitchen.

Watching a beautifully golden-roasted whole duck get carefully separated into meat and skin, right in front of us, was a real treat for the eyes too. ^^

Once the trimming was done, the duck meat came out plated.

Since there were only two of us, we got the half duck. It was arranged like a flower!^^

Crisp skin with pink salt, pancake wraps and fried bone chips

First I tried the crispy-roasted skin dipped lightly in pink salt. That signature rich, savory fat and crispy texture from the skin was absolutely delicious.

Following the instructions, I laid down a thin wheat pancake, topped it with duck meat, julienned scallion and cucumber, added yajang sauce, and wrapped it up. The clean flavor of the duck meat paired with the crisp cucumber and scallion aroma and the sauce, and the taste was maximized even further.

They also served a plate of crispy-fried leftover duck bones. There's a lot of meat still clinging to the bones. My husband gave it a thumbs up, calling it one of the best things we ate!

After the meal, near the restrooms, there were disposable mouthwash packets available, so we could freshen up neatly before leaving.
