I had an important appointment in Geomdan a while back, so I made the trip.

By the time I wrapped up my morning-to-evening schedule, it was exactly dinner time and I was starving. Since I'd come all the way to Geomdan, I didn't want to just eat anything, so I quickly searched "Geomdan restaurants" and "Geomdan new town restaurants" on my phone.

Wanting a good meal as a reward for getting through my schedule, I kept searching until one place caught my eye.

It was HOKATSU, a tonkatsu (pork cutlet) restaurant in Incheon certified by the Blue Ribbon Survey! The moment I saw the reviews and photos, I thought "okay, it's here today" and headed straight over without hesitation.

HOKATSU is a tonkatsu restaurant located at 1098-5 Dangha-dong, Geomdan-gu, Incheon, just 303m from Dokjeong Station Exit 1. It's close to both Dangha-dong and Geomam-dong, making it very accessible for anyone searching for restaurants in either neighborhood.

It's a Blue Ribbon Survey-certified spot, and they use their own patented "yogurt dry-aged pork" method. A welcome yogurt is also served before the meal.

The moment I arrived, the first thing that greeted me was the clearly displayed Blue Ribbon sticker at the entrance. Honestly, Blue Ribbon-certified tonkatsu spots are rare even among Incheon restaurants, so my expectations shot up before I'd even eaten a bite.

I got there right after break time ended, and the interior was neatly arranged, making for a comfortable dining atmosphere. Other guests started trickling in right after us, so I was glad I'd timed my arrival for right after the break.

Not long after we sat down and ordered, they brought out an adorable pre-meal yogurt in a small dish.

"Why yogurt at a tonkatsu place?" I thought, and took a spoonful — the homemade yogurt with a touch of sweet honey woke up my palate refreshingly. It was the perfect welcome dessert to whet the appetite before the meal.

It turns out the real reason HOKATSU stands out is exactly this "yogurt aging." Instead of the usual wet-aging or dry-aging, they use their own unique method of aging the meat in yogurt.

The lactic acid bacteria and components in the yogurt completely remove any pork smell and loosen up the muscle fibers, so once fried, the meat becomes extremely tender and moist.

What really impressed me was the complete absence of any greasiness or off-smell that can sometimes come with fried pork.

How were the three-katsu platter and curry cheese katsu at HOKATSU?

While mulling over the menu, I ordered the two most-loved signature items at HOKATSU. Spoiler: it was absolutely the right call!

I'd recommend this without hesitation to anyone with decision paralysis or anyone who wants to try several cuts at once.

Through the crispy batter, the grain of the meat looked visibly loose and remarkably moist rather than dense. The moment I took a bite, there was a crisp "crunch" followed by the deep savoriness unique to yogurt-aged meat and tender juices bursting through my mouth.

The outside was crackly-crisp while the inside was so tender you could practically chew it with your gums — a textbook case of crispy-outside, juicy-inside.

Dipping it lightly in salt let me taste the meat's natural flavor, and topping it with wasabi gave a clean finish — I never got tired of it, even down to the last piece.

2. Curry cheese katsu: a mild curry with strands of chicken breast

I expected the thin, ordinary Japanese-style curry you get at most tonkatsu places, but HOKATSU's curry had a genuinely fascinating, fun texture.

It felt like they'd shredded chicken breast finely along its grain and packed it in — there was real bite to it, yet the flavor stayed light and clean.

The savory, chewy cheese and rich juices of the cheese katsu combined with the light, textured special curry was a fantastic pairing.

I usually eat a lot of rice with tonkatsu, but the curry itself was so tasty and light that I ended up focusing entirely on the curry and the cutlet rather than the rice.

So I ate relatively little rice and scraped up every last bit of curry instead. I'm definitely ordering this curry cheese katsu again next time!

It was a meal that made me nod along with why this place earned its Incheon Blue Ribbon recognition.
