While trying to figure out a good lunch spot to take my kid, we went to Gyeomson Donkatsu Geomdan Branch, well known as a katsu restaurant near Geomdan Intersection. I've always loved Japanese-style premium katsu with a crispy outside and juicy inside, and Gyeomson Donkatsu never disappoints.

Once inside, the neat wood-tone interior, pretty lighting, and lush green plants all worked well together. It was a warm space to have a relaxed meal in.

We ordered the restaurant's two most popular menu items, one cheese katsu (치즈돈가스) and one tenderloin katsu (안심돈가스). Cooking starts the moment you order, and each piece reportedly rests for 15 to 20 minutes to lock in the juices of the thick meat. They use Jeju pork aged for over 14 days, so you can't help but look forward to it.

After a short wait, the katsu arrived as a neat full set. The tray was generously loaded with the katsu, rice, soup, salad, curry, Himalayan pink salt, wasabi, the house special katsu sauce, plus diced radish kimchi and pickled radish.

Cheese katsu: what's inside the cutlet

The cheese katsu is overwhelming just to look at. Inside the crispy fried crust, it's packed with savory, soft cheese, and every bite spread flavor all through my mouth. The crunch of the coating, the richness of the cheese, and the clean flavor of the meat came together perfectly.

Tenderloin katsu: how the pork tastes

True to using aged Jeju pork, the tenderloin katsu looked moist, holding a hint of reddish juice. The pink hue characteristic of fresh pork really got my appetite going, and the moment it hit my mouth, the tender bite was striking. With no gaminess and juices bursting out, it was the textbook definition of a premium katsu.

I can't leave out the tips for enjoying Gyeomson Donkatsu. First is dipping it in the Himalayan pink salt served alongside. The salt's clean umami maximizes the meat's natural sweetness and juiciness, and it's really great for focusing purely on the texture of the meat.
