When it rains or the weather turns chilly, the first thing that comes to mind is Deungchon Shabu Kalguksu!

Starting with shabu-shabu, moving to chewy kalguksu (hand-cut noodle soup) noodles, and finishing with the signature savory egg fried rice — I went looking for that perfect shabu-noodle-fried rice three-stage combo.

Walkable from Giheung Station, and no parking worries if you drive

Deungchon Shabu Kalguksu is close to Giheung Station, making it very convenient to reach by public transport. It's a perfect stop after work when you're craving a spicy broth, or a solid choice for a weekend family meal too.

It's located on basement level 2 of the ICT Valley building. The building's parking facilities are clean and well set up, so you can drive there without any parking worries.

The store was kept spotlessly clean and comfortable, which put me in a good mood the moment I walked in.

Ordering at the kiosk: what comes with the spicy mushroom kalguksu course

Every table has an ordering kiosk installed, so ordering was very convenient. For the base order you can choose among spicy, perilla, or clear mushroom kalguksu — and since Deungchon is really all about that spicy, punchy flavor, I went with spicy!

The base course includes vegetables (minari, mushroom, potato) + kalguksu noodles + dumplings + fried rice!! Having fried rice included makes the whole spread feel really substantial. I also added shabu beef to make it even richer.

Stage 1 — shabu beef in minari broth

The fragrant minari (water dropwort) and rich broth were seriously insane!! Once the pot full of fresh minari comes to a boil, its distinctive aroma spreads through the whole broth.

The beef I added for just ₩10,000 is a must. I couldn't wait to eat it, so I dropped it in the moment the broth boiled.

Once the broth boils, briefly cook the fragrant minari, mushrooms, and shabu beef, then dip them into the special soy-wasabi sauce. Minari and mushrooms add more flavor to the broth the longer they simmer, so if you love vegetables, adding extra veggie servings makes the meal even richer and tastier!

After cooking the thinly sliced shabu beef, wrap it around crisp minari and chewy mushroom for a bite where the meat juices and spicy broth come together beautifully!

Stage 2 — kalguksu noodles and dumplings

After eating most of the meat and vegetables, add the kalguksu noodles and dumplings and simmer them well in the now deeper broth! Adding the springy noodles and stuffed dumplings to the richly infused spicy broth for round two — yum, haha.

Deungchon's kalguksu noodles were genuinely chewy, and once they soaked up the broth, that savory flavor seeped into every bite, making for the best slurping texture ever, haha. Also, if you overcook the dumplings they fall apart, so scoop them out once they're cooked just right and floating to the surface — they're delicious that way!

Stage 3 — finishing with egg fried rice

After finishing the noodles, I asked staff to finish it off with the savory egg fried rice, haha. I honestly think this fried rice eaten at the end is Deungchon's real main dish. Once you've finished eating, ask the staff and they'll take the pot away and fry it up fluffy and perfect for you.

Fried crisp over high heat, the savoriness of egg and the aroma of scallion coat every single grain of rice. It was the perfect finish, the kind that makes you scrape the pot clean. Topping it with the basic side dish of fresh geotjeori kimchi (freshly seasoned cabbage kimchi) makes the combo complete.
