To kick off a proper Friday night, I really wanted to eat some good meat, so I headed to Jeongwon Galbi, a well-known pork rib spot in Paju! I worried it might be busy on a weekday evening, but sure enough — Friday night, and it was packed!

Where is Jeongwon Galbi Paju Main Branch, and what are its hours?
Jeongwon Galbi Paju Main Branch is on the 1st floor of 478-8 Pajuro, Paju, Gyeonggi, South Korea, right next to Unjeong café Patteo and Somun-nan Paldang Naengmyeon. Think of it as being around Unjeong Sannae Maeul 7-danji! It's open daily from 11:30 to 22:00, with last order at 21:00.
This Paju pork rib favorite also serves a bossam (boiled pork) set and other meal menus at lunch, so it seems like a great spot for a midday visit too!


The lunch set is available on weekdays until 3pm with a minimum order of two servings, and takeout gets a 50% discount!


Friday evening at Jeongwon Galbi: atmosphere and private rooms
This Paju pork rib favorite was pretty crowded when I visited during mealtime, but it cleared out fast after around 8pm! They also have private rooms, which seem perfect for a meal with parents, a date, or a work dinner!

After sitting down, I looked over the menu! Let's go through it together.

We ordered the Jeongwon marinated pork ribs, beef short rib, chadol sulbap, and mul naengmyeon! That's a lot, haha. After ordering, we checked out the self-bar!


What's at the self-bar?
At the Jeongwon Galbi self-bar you can grab as much lettuce wrap greens and onions as you need, which made it easy to add extra veggies while eating meat! You could also spoon garlic into a small dish and make sesame-oil garlic to grill, which was great!





The side dishes served with the galbi
Before the main dishes arrived, the basic banchan (side dishes) were set out first — and personally, at a BBQ place I care just as much about the side dishes as the meat, so I dug in with high expectations. The banchan included japchae (glass noodle stir-fry), seasoned raw crab, seasoned lettuce, geotjeori (fresh kimchi), kimchi, and salad, and overall they were all delicious. Each one had its own character and none were too salty, which I loved! My favorite was the seasoned lettuce — sweet and tangy, perfect for waking up the appetite.


How do the Jeongwon marinated grilled pork ribs taste?
The Jeongwon marinated pork ribs were the first thing to arrive out of everything we ordered at this Paju pork rib favorite! Honestly, the most frustrating thing about marinated ribs is that they're often too sweet or too salty — a strong marinade tastes great for the first few bites but gets tiring fast, so I was a bit worried.
But the Jeongwon marinated pork ribs were a little different from marinated ribs I've had before. Not too salty, and not too sweet either — I loved that. It didn't feel like the marinade completely covered the flavor of the meat itself; more like the meat and marinade blended together naturally??

The marinated ribs at this Paju pork rib favorite weren't overly sweet, so they were actually easy to keep eating — a flavor that anyone, young or old, would like without question!

The meat was tender to chew, and the marinade's savoriness was just the right depth, so it also paired well wrapped in lettuce with garlic or onion on top!

Is the chadol doenjang sulbap portion generous?
After eating a good amount of meat, we ordered the chadol sulbap. The first thing I noticed was that the portion was quite generous. It was plenty even to share between two people, so I thought it'd be a good add-on meal item after finishing the meat! The beef brisket (chadol) added a savory richness to the broth, and it was warm and filling, pairing well with the meat too. It seems especially suited to people who feel like meat alone isn't quite enough.

How should you grill the beef short rib (galbisal)?
After the marinated ribs, we grilled up the beef short rib too. Technically we should have grilled the beef first, but... mistake, haha. The beef short rib clearly had a different appeal from the marinated ribs. Where the marinated ribs were sweet-savory and umami-rich, the beef short rib's charm was the deep, savory meaty aroma of the beef itself. As the outside browned over the fire, a savory aroma rose up. Rather than grilling it too well-done, I'd recommend cooking it just enough to keep the tender texture!

Since it wasn't marinated, I could really taste the meat itself, and it paired well whether dipped lightly in salt or eaten wrapped in lettuce with ssamjang (dipping sauce)!
Finishing with mul naengmyeon, plus the review event
And lastly, we ordered mul naengmyeon too... forgot to take a photo of the cold noodles. Guess that shows how much we enjoyed it, haha. Korea's own K-dessert, naengmyeon, had a clean flavor and really felt like it refreshed the palate!

Before paying and heading out, I noticed they're giving away ice cream through a review event, so it might be worth joining for a little dessert!
Final verdict on Jeongwon Galbi Paju Main Branch
If you like marinated ribs but find overly sweet or intense seasoning off-putting, I'd recommend this Paju pork rib favorite, Jeongwon Galbi! Add in the beef short rib, cold noodles, or chadol sulbap and you get a nice variety of flavors — I think I'd order a similar combination again next time. I'll be back!
