I recently went back to Sushi Doku The Songdo (스시도쿠 더송도), a sushi place in Songdo, Incheon, that I've honestly lost count of how many times I've visited. Beyond just how fresh the sushi is, the menu lineup and the whole vibe of the place are consistently satisfying, so whenever I'm craving sushi in Songdo I end up here again without even thinking about it.

Sushi Doku The Songdo is on the 2nd floor of Onesta Mall, connected to the Hyundai Outlet building, so it's easy to pair a meal with some shopping before or after. We arrived right at the weekday 11am opening time. Worth noting — there's a break time from 14:30 to 17:00, so keep that in mind when planning a visit.

Just seeing all the waiting chairs set up outside tells you this place is popular. It gets busy enough at peak times to form a queue, so if you want to avoid the wait, coming right at opening or a bit later works well.

The interior of Sushi Doku The Songdo is clean and calm overall. It's not set up with private rooms, but there are light partitions between tables so you don't lock eyes with the next table over — it feels fairly private.

I looked over the menu — right now there's an event where writing a Naver receipt review gets you a free premium sushi normally priced at ₩6,900. The sushi sets come in three tiers. The Bonpum Sushi Jeongsik and Myeongpum Sushi Teukjeongsik are both 10-piece sets, differing in which fish are included. The Teukpum Sushi Wanjeongsik adds three more pieces — toro, sea bass and hotate scallop — to the Myeongpum set for a total of 13 pieces. Most people seem to go for the Myeongpum Sushi Teukjeongsik as the safe, well-rounded choice, and that's what we ordered too.

Sushi Doku cooks everything 100% live to order, so it takes a bit of time for the food to come out. While waiting, we sipped some warm plum tea.

After a short wait, the Myeongpum Sushi Teukjeongsik finally arrived. Everything was laid out neatly on one tray — good to look at and easy to eat.

The set is flounder, red seabream, salmon, squid, sweet shrimp, tuna akami, red shrimp, snow crab, eel and ankimo (monkfish liver) — 10 pieces. It doesn't lean too heavily on one type of fish either — white fish, salmon, shrimp, red-fleshed fish and eel are all represented, so it's fun picking through them one by one.

Sushi Doku says they carefully select ingredients sourced domestically, age them using traditional Japanese techniques, and use everything up the same day as a rule. The cuts of fish are also noticeably bigger than typical sushi, so even one piece feels satisfying.

We started by settling in with the soft truffle chawanmushi (steamed egg custard) and salad. The chawanmushi was smooth and moist, a nice light bite before getting into the sushi.

After that we dug into the mini udon and tempura too. With mini udon, karaage (Japanese fried chicken) and shrimp tempura all included, it made for a really filling meal. Both the salad and udon are refillable, so if you're still hungry, just ask for more.

We were told white fish is best eaten first, so we started there too.

There's a little brush provided for the soy sauce — just dab it lightly on top of the sushi. I like eating mine with ginger, so I dipped some ginger in soy sauce and topped the piece with it!

Freshness and texture really matter with sushi, and on that front this is a place that holds up even after repeat visits.

I especially love that the salmon comes in thick cuts. When a piece is too small, eating a variety of types can still feel underwhelming, but with cuts this thick, each one feels worth savoring.

The karaage is good, but honestly I think the shrimp tempura at Sushi Doku is even better. Crispy batter, plump shrimp — great to alternate with the sushi.

On the way out after the meal, there's not just toothpicks but floss and mouthwash set up too. After eating sushi your mouth can sometimes feel a bit fishy, so this kind of thoughtful touch is a nice detail. It'd be especially appreciated if you're there on a date!

I've been here many times now, but this visit was just as satisfying, from the sushi to the side dishes. It's a great stop to pair with the Hyundai Outlet and Triple Street when you're craving sushi in Songdo. I'm sure I'll be back again next time the craving hits.
