I have no idea why I've been craving meat so much lately — I feel like I've been going to a BBQ place more than once a week these days. So when I heard there was a spot with real charcoal and straw smoke flavor baked into the meat, I had to check it out! This is Jipbul Taebaek Suwon Ingye Branch on Nahyeseok-geori near Suwon City Hall Station, let's get into the review!
Where is Jipbul Taebaek Suwon Ingye Branch, and what are the hours?
Jipbul Taebaek Suwon Ingye Branch is 5 minutes from Exit 9 of Suwon City Hall Station, right on Nahyeseok-geori, so it's a great spot in a busy area if you're meeting someone.

They're open every day from 11:30am to 1am, no closed days :) Opening is 11:30am, and since this was a brunch plan for me, I got there right around opening and waited a bit. Even the font on the sign got me hyped for smoky meat 🔥

They also run a set-meal menu on weekday afternoons, so keep that in mind if you're visiting for lunch!
Inside Jipbul Taebaek: table spacing and terrace seats
The interior of Jipbul Taebaek Suwon Ingye Branch has pretty wide spacing between tables, so we could chat comfortably without worrying about the next table over.


The whole vibe feels open and airy, which is great for hanging out with friends like I did, but I think it would also work well for anyone looking for an Ingye-dong dinner spot or a date place.

On a nice day, I'd recommend the terrace seats where you can see outside!

There's everything from straw-fired galbi, pork belly, and hanging tender to Korean beef yukhoe (raw beef), beef tartare, and pork skin. They also have a straw-fired meat lunch set, so if you're craving meat, go for it~!
How the charcoal sear and rice-straw smoking work
The charcoal sear + rice-straw smoking starts the moment you order 🔥 This was the part I was most excited about at Jipbul Taebaek — as soon as you order the meat, they sear it over charcoal first, then smoke it with rice straw. (It does take a bit of time!)



They smoke it open-kitchen style, so I got to wait with butterflies in my stomach.
Side dishes and the self-serve bar
While waiting, we got the basic side dishes — japchae (glass noodle stir-fry), pickled radish, salad, and various sauces and pastes — and I personally felt the quality of the sides was better than at other places.

The house sauce that came with it was so good that my chopsticks kept going back to it for dipping the meat!!

If you run low on sides, you can grab more from the self-serve bar, so it was easy to top up as much as we wanted. (The garlic and perilla leaves were so good >_<)

Finally, the galbisal we'd been waiting for arrived! Isn't the color alone so mouthwatering...? Since it had already been seared and smoked, the smoky aroma hit us the moment it landed on the table.
But the best part was that a staff member grilled it for us in person!

They grilled it from start to finish, so all we had to do was sit back, chat, and wait comfortably. No frantically flipping meat or worrying about it burning — this seems like a great spot no matter who you go with. Since it's pre-seared, it grills up really fast.
First bite plain, then house sauce with neungi mushroom and wasabi

Finally, one bite of the galbisal the staff grilled so beautifully! First I tried it plain, without dipping it in anything, to taste the straw-fire flavor of the meat itself — and the smokiness was definitely the standout point!! The charcoal and rice-straw smoke aromas rose up gently, and the meat's flavor felt really rich.
And then there was the house sauce + neungi mushroom + wasabi combo they recommended! This combination was seriously delicious haha. I'm normally a ssamjang (soybean paste) person when I eat meat, but that day I think I ate almost everything with just this combo,,?! The aroma of the neungi mushroom and the wasabi paired so well with the meat, and adding the house sauce on top just kept me coming back for more. That sauce is a real winner.




Still, I couldn't resist a wrap (self-serve bar to the rescue again...🤍). I put the meat on a perilla leaf, added rice, and made a solid wrap — and yep, it's delicious this way too haha.
Adding buckwheat bibim naengmyeon
It feels a little sad to eat meat without naengmyeon (cold noodles), right? So in the end I couldn't resist and added the buckwheat bibim naengmyeon too, hehe.


You mix it with the ice-cold broth that comes alongside. Since it's buckwheat noodles rather than regular noodles, the texture had a nice softness to it. As for the sauce — well, no words needed.

Topping it with a piece of the beautifully grilled straw-fired galbisal makes this combo truly impossible to resist 🔥

Eating the chewy buckwheat bibim naengmyeon together with the smoky galbisal was perfect — the noodles cleanly cut through the richness of the meat, so I just kept eating,, in the end my friend and I finished it all off very thoroughly haha.
Worth it for smoky grilled meat in Ingye-dong, Suwon?
Jipbul Taebaek Suwon Ingye Branch isn't just a place to grill meat — what set it apart was really getting to enjoy proper smoky flavor through charcoal searing and rice-straw smoking! Having the staff grill the meat for us was so convenient, and everything from the basic sides to the house sauce, neungi mushroom, and wasabi was such a winner! My friend and I already decided to come back to try pork belly or other meats instead of galbi.
