Pork neck bone kalguksu and dumpling set in Siheung: Pyeongi Dambaek

Last Friday I went to Siheung Premium Outlets. You know how, when you're out shopping, deciding on lunch is somehow always the hardest part haha. One person wants noodles, another wants rice, and someone else is craving something else entirely.
That's why the Taste Village on the first floor of Siheung Premium Outlets is great — all the restaurants are gathered in one spot, so everyone can pick what they want. That day, we chose Pyeongi Dambaek Bone Kalguksu.

After getting our fill of shopping at Siheung Premium Outlets, we headed to Taste Village right around lunchtime.

The nice thing about Taste Village is that with several restaurants grouped together, families don't have to agree on one single menu. Someone can have kalguksu while someone else eats something totally different, all in the same space — makes eating at the outlet mall so much easier.

What we ordered: two meat dumpling sets
We ordered one bone kalguksu meat dumpling set and one spicy bone kalguksu meat dumpling set — one regular, one spicy — so we could compare the two.

I was extra curious because Pyeongi Dambaek Bone Kalguksu was apparently featured on the TV show Tasty Guys. On the show, the cast even finished off their soup with rice. Having eaten it myself... wow, there was no way I could manage rice too haha. The portions were way bigger than I expected.

With both dishes out, the table looked seriously full. Each bone kalguksu came with meat dumplings, kimchi, seasoned cucumber and peppers, and a dipping sauce. The side dishes tasted like they were made in-house, which made them even better. The biggest difference between the regular and spicy versions really comes down to whether the seasoning packet is stirred in.
First up: the regular bone kalguksu broth

The regular bone kalguksu has a clear broth with yellow egg garnish, scallions, and hefty pieces of pork neck bone. The bowl itself is quite large, and it's packed generously with both meat and noodles — filling just to look at.
The kalguksu noodles are just as generous. The noodles alone would be filling, but with all that meat on top, it becomes a seriously hearty meal.

What I liked best here was the meat. There's a surprising amount of meat clinging to the pork neck bones, and it's not tough at all — tender enough to fall apart. This isn't a kalguksu that's just heavy on noodles; you actually get to eat proper meat too. That's the charm of Pyeongi Dambaek Bone Kalguksu.

Dipping the meat in the provided sauce is also delicious. Eating it alongside the broth and then switching to the sauce every so often changes up the flavor nicely.

A bite of meat, then a bite of noodles, haha. There was so much meat clinging to the bones that it never felt like just one or two bites and done — it felt like a proper meat meal.

Spicy bone kalguksu: a proper hangover cure
Then there's the spicy bone kalguksu. It's not a completely different dish from the start — it's more like the regular bone kalguksu with a spicy seasoning added.

Once you mix the seasoning well into the broth, the flavor completely changes. It starts off tasting like the mild regular version, but as the seasoning dissolves, it turns tangy and spicy — total hangover-soup vibes! If you'd had a drink the night before, this is exactly the broth you'd be craving haha.

The spicy broth soaks slightly into the noodles, and eating them together works really well.
The spicy version also came with plenty of meat. The tender neck-bone meat paired with the spicy broth had a different kind of charm from the regular version. Regular: mild and clean! Spicy: tangy and fiery! If you're visiting as a pair, ordering one of each to share seems like a great idea.
Why the meat dumpling set was the right call

We both ordered the meat dumpling set.

The dumplings were packed with filling too, making a nice bite here and there while eating the kalguksu. The kalguksu portion is already big, so by the time you finish the dumplings too, you're genuinely stuffed haha.

Seeing a full set laid out for just one person, you immediately understand why the portions feel so generous.

The seasoned cucumber and peppers were also nice to have between bites — a good palate reset.
Did the Tasty Guys cast really add rice to this?
After learning Pyeongi Dambaek Bone Kalguksu had been featured on Tasty Guys, I looked it up and saw the cast finishing their bone kalguksu with rice mixed in. Before eating it myself, I thought, 'a bit of rice mixed in at the end would be delicious~'
But after actually eating it... so many noodles, so much pork neck meat, plus the dumplings on top, and I was already completely stuffed haha. There was no way I could manage rice after that. Major respect to the cast on that show haha.
Taste Village: easy for groups who want different food

This is what I liked most about eating at Siheung Premium Outlets: since the restaurants are all gathered in one space, the people you're with don't have to agree on one menu. When you're out shopping at the outlet mall, the kids, your husband, your mom — everyone wants something different sometimes.
In those moments, Taste Village makes it easy — everyone picks what they want and eats together in the same spot. It also made getting from shopping to eating and back to browsing really convenient.

Other Pyeongi Dambaek dishes worth trying next

Besides bone kalguksu, they also have items like bibim kalguksu, so it might be worth trying something else next time.

That said, if it's your first visit, it's probably best to try the signature bone kalguksu first.

That's my visit to Pyeongi Dambaek Bone Kalguksu, a solid spot to eat at Siheung Premium Outlets. It's a great choice when you want a hearty meal in the middle of shopping. What stuck with me most was the generous pork neck bone meat — really tender, and there was a lot of it, making it genuinely fun to eat the noodles and meat together.
The regular version is mild and clean, while the spicy one turns into a tangy hangover-soup style once you stir in the seasoning, so it's easy to pick based on your mood. And with the meat dumpling set on top, we left completely stuffed haha.
