Seomyeon galbijjim restaurant piled with bean sprouts: Sinchon

In short

Sinchon Yangpuni Seomyeon Main Branch is a yangpuni galbijjim (braised short rib) restaurant in an alley off Seojeon-ro 10beon-gil in Busanjin, Busan. On a weekday evening after overtime, the signature spicy galbijjim, a ramen noodle add-on and sides were ordered from the tablet at the table, and the pot arrived piled high with bean sprouts; following the tip sheet on the wall, the meat, onion and mayo sauce went into perilla leaf wraps, and ramen noodles were cooked in the sauce left at the end. Because the galbijjim comes ready to eat instead of simmering at the table, Sinchon Yangpuni makes a filling dinner on a hungry commute home.

Signature galbijjim (braised short ribs) at Sinchon Yangpuni Seomyeon Main Branch

A tired weeknight after overtime, into the Seomyeon alleys

It was one of those weekday evenings where endless overtime and a backlog of work had drained every bit of energy out of me. The second it hit quitting time, I dragged my exhausted body straight out of the office. Standing on the street with a cool breeze brushing past, I decided that tonight, of all nights, I needed something rich, spicy, and filling enough to properly warm me up.

The busy main road felt like it would just wear me out more with all the crowds, so I turned off and wandered into a cozier alley instead.

This place had apparently been a quiet favorite among locals and nearby office workers for a long time, because the moment I rounded the corner into the alley, the thick smell of seasoning hit my nose and woke up my sleeping stomach. The exterior wasn't flashy or glossy, but that plain, homey interior somehow felt strangely comforting to a tired office worker like me.

Stepping inside, the warm, lively air rushed over me, a sharp contrast to the cold outside.

Sinchon Yangpuni Seomyeon Main Branch: menu and how to order

At Sinchon Yangpuni Seomyeon Main Branch, you order through a smart ordering system attached to each table. The place was already pretty packed with tables enjoying their dinner. I found an empty seat, took a look around, and started going through the menu carefully.

The menu was well put together, with a main dish, a variety of toppings to add on, and plenty of side dishes to round out the meal — great for a group who wants to mix and match to their taste.

After some deliberation, we settled on the restaurant's signature spicy galbijjim (braised short ribs), sized for our headcount, along with a noodle add-on for some crunch and a few matching sides to finish the order.

Side dishes included: corn salad and acorn jelly in broth

Not long after ordering, neat little side dishes started arriving on the table one by one. A savory corn salad to soften the spice, a cool and mild acorn jelly bowl, and fresh lettuce wraps with the house mayo sauce for wrapping the galbijjim all lined up in a row.

Can you eat the yangpuni galbijjim right away?

The yangpuni galbijjim at Sinchon Yangpuni Seomyeon Main Branch comes already slow-cooked in the kitchen, so there's no need to fire up a burner at the table and wait around — you can dig in immediately. For us, starving as we were, that was a huge plus. While we were chatting, the main event arrived: a big pot of galbijjim looking absolutely mouthwatering, with bean sprouts piled up like a mountain on top for extra crunch.

Once the burner was on and the pot started bubbling, the deep, rich smell of the sauce kept drifting up and making me swallow involuntarily. Just barely nudging the meat with my chopsticks was enough to have the bone slide right off the flesh — it was so tender that I could tell just by looking, before it even hit my mouth.

The sweet-and-spicy, heavy savoriness had soaked deep into the meat, and the more I chewed, the more the rich juices and seasoning came together beautifully.

Building the perilla leaf mayo wrap the way the wall says

The meat alone was plenty tempting, but I noticed a tip sheet on the wall for eating it the tasty way, so I gave it a try exactly as instructed.

I laid a fresh perilla leaf in my palm, piled on the tender braised meat, crunchy onion, and a generous dollop of the special mayo sauce, and took a big wrap-bite. The sharp spiciness got wrapped up perfectly by the savory, smooth mayo sauce, hitting a perfect balance in my mouth. It wasn't just harshly spicy — it was addictive in a way that kept my chopsticks moving nonstop.

About halfway through the meat, we agreed to add ramen noodles to the rich sauce left in the pot and boil them up.

We let the spicy seasoning soak quickly into the noodles, then slurped them up while they were still chewy — it felt like eating a whole different dish.

Fluffy, well-risen egg custard

Right as the spice started lingering in my mouth, a big spoonful of the fluffy, well-risen egg custard cooled down my frozen insides in the warmest way.

How was Sinchon Yangpuni as an after-work dinner?

It's not a flashy dish chasing trends, but a full meal that let me feel exactly what sincere, steady, handmade cooking tastes like. A body and mind worn down by a full day of work felt genuinely refreshed and comforted by one warm, spicy dish.

Fancy restaurants for special occasions are nice too, but sometimes a humble little eatery where you sit shoulder to shoulder with people you get along with, clinking spoons without pretense, gives you a much bigger sense of rest. Next time I want to blow off stress with a spicy, filling dinner, I think I'll come straight back to this alley without a second thought. If you're planning a visit, here's the info to check first.
