While looking for a proper beef gopchang (grilled beef intestine) spot near Garak Market, I found Jinseong Hanwoo Gopchang Garak Flagship.
Two servings of savory beef gopchang came with an aged garlic sauce made with minari (water dropwort), plus house-aged kimchi — the sides were pretty impressive.
What really caught my eye was a kimchi-aging room set up separately on one side of the store, which made me feel like this place takes its food seriously.

The first thing I noticed walking in was the kimchi-aging room set up separately on one side of the store.

Seeing that they don't just prep kimchi in the kitchen but built an entire aging room for it made me think — these people really care about their kimchi!

Sure enough, the basic sides included gat kimchi (mustard leaf kimchi), chonggak kimchi (baby radish kimchi), and green onion kimchi, all of which went great with the gopchang.

The sharp bite of garlic combined with the fragrant minari worked better with the gopchang than I expected. Dipping the savory gopchang lightly in the sauce added a deeper garlic flavor that made everything richer.

Green onion kimchi, steamed egg and the other free sides
The green onion kimchi in particular had a sharp, well-fermented flavor that paired nicely with the savory gopchang, so I kept reaching for it between bites.
Kimchi is a must with greasy food, and having these aged kimchi varieties on the table really refreshed my palate so I could keep eating.

Steamed egg also came out as a basic side — soft and fluffy, it was a nice light bite before the gopchang arrived.

Tasting the sides one by one before the gopchang even arrived built up my anticipation for the main dish.

The staff grilled the gopchang to just the right point, so we could eat comfortably without worrying about timing,
and taking a bite of the perfectly cooked gopchang, the outside was chewy while the inside was packed with savory fat.

The more I chewed, the more the savory flavor came through along with that distinctive chewy texture — a taste any gopchang fan would enjoy.
