Paju Dongpae-dong bakery olive cheese ciabatta haul: Boulangerie Tan

In short

Boulangerie Tan Unjeong Main Branch is a bakery on Chorongkkot-ro in Dongpae-dong, Paju, where the bread is cold-fermented for more than 14 hours. After lunch, I left the sandwiches for next time and took out olive cheese ciabatta, milk cream salt bread, tiramisu and flan, each individually wrapped, for a home café spread. The chewy, salty olive cheese ciabatta was the most addictive of the four.

What kind of bakery is Boulangerie Tan Unjeong Main Branch?

Let me introduce a delicious bakery that makes bread through more than 14 hours of low-temperature fermentation. Boulangerie Tan uses organic flour and French flour to create a Dongpae-dong favorite packed with brunch options. Salt bread, cakes, all kinds of sandwiches, baguettes, ciabatta, and more! Here's my review of Boulangerie Tan Unjeong Main Branch, full of delicious breads.

I could shop for bread comfortably since there's direct access to the underground parking lot.

Boulangerie Tan's principle is baked and sold on the same day. It's a place where you can taste bread and desserts made with care, using natural levain, organic flour, natural butter, and dairy cream. Good ingredients plus low-temperature fermentation with natural levain — I can't even imagine how much effort goes into making delicious bread!

I studied baking briefly a while back, and making bread is no ordinary task. Especially using natural levain! Making this many different breads without a single measuring agent, emulsifier, preservative, or coloring is really not easy. I'm so excited to see what kinds of bread are in store.

What breads make a good brunch at this Dongpae-dong favorite?

Walking into Boulangerie Tan, you'll find it full of brunch menu items that make Dongpae-dong a foodie destination. If you love a home café, this is a place where you'll want to fill both hands with bread.

The sandwiches especially looked so delicious. It's not just the bread — the fillings were so generous! Sadly, I had just eaten lunch, so I decided to save the sandwiches for next time. There are so many varieties that you could enjoy them for brunch every day without getting tired of them.

There's also a variety of ciabatta that gets more savory the more you chew. A piece of chewy ciabatta with a fragrant cup of coffee — is there a more perfect brunch than that?

How many kinds of salt bread does Boulangerie Tan bake?

Salt breads displayed by variety

If you love salt bread, you have to visit Boulangerie Tan. Plain, of course, plus chapssaltteok (sweet rice cake) salt bread, myeongnan gamja (pollock roe potato) salt bread, milk cream salt bread, honey garlic, and more! There are so many varieties that eating your way through just the salt breads could take days. Chapssaltteok salt bread! How did anyone even think of that combination?

How the olive cheese ciabatta and milk cream salt bread taste

Individually packaged breads ready for takeout

I packed home a generous haul. Everything was neatly individually wrapped, so it would've been great to take straight to a picnic too.

The olive cheese ciabatta is best enjoyed just by tearing in and eating. It goes well with coffee, of course, but also with tea or milk. The chewy texture unique to ciabatta, the fragrant olives, and the flavor from three types of cheese — the savory, salty taste is incredibly addictive.

This is the milk cream salt bread. It must be refrigerated, so it's best to buy it and eat it right away.

Milk cream salt bread overflowing with cream

It's absolutely overflowing with savory milk cream. Chewy on the outside, moist inside! Sweet cream and a little pop of salt — it's a bewitching salt bread that you just keep eating even with cream all over your hands and mouth.

Tiramisu and French-style flan at Boulangerie Tan

This was the softest, richest tiramisu I've ever had. The deep coffee aroma of Fritz coffee beans and the rich, savory mascarpone cream! A sweet bite made for adults. With just a fragrant cup of coffee, your own home can turn into a café.

The flan has a springy bite that then spreads softly in your mouth. Can you see the crispness of the surface just by looking at it? Flan is said to be an authentic French-style egg tart dessert. It's also generously sized, big enough to fill your palm. A dessert that satisfied both in texture and taste.
