Uijeongbu noodle restaurant's new spicy braised ribs: Daedae Myeonok
In short
Daedae Myeonok is a Korean restaurant on the main road in Gosan-dong, Uijeongbu, Gyeonggi, serving naengmyeon (cold noodles) and kalguksu (knife-cut noodles). Three of us ordered two servings of the new spicy galbijjim (braised pork ribs) and one arongsatae kalguksu, and the pork ribs were braised until the bones slipped right out, alongside a noodle bowl in dried pollack and beef broth. The heat is only about Shin Ramyun level, so anyone who likes real spice should ask Daedae Myeonok to turn it up.

Today I went to Daedae Myeonok, a restaurant well known in Gosan-dong, Uijeongbu for its cold noodles, to try their new galbijjim (braised ribs)!

Where is Daedae Myeonok, and what are its hours?

Oh my, it turns out this place appeared on a TV show as a master of naengmyeon!
Daedae Myeonok, a Uijeongbu Gosan-dong favorite, sits right on the main road near the Gosan district intersection, taking up an entire building so it's easy to spot from far away. It's across from Gosan Deulkkae Kalguksu and next to Odagadashyashilik.
Best of all, it's open year-round with no break time, so it's a great place to visit whenever you like.

Inside Daedae Myeonok: high chairs and the self-serve bar
The inside of Daedae Myeonok was spacious and clean! It's mostly set up with tables for four, neatly arranged, so it seemed like a great spot for family meals as well as gatherings of all kinds.
The restaurant was originally called Daedae Kalguksu but changed its name to Daedae Myeonok — probably because they wanted to sell a wider variety of menu items!

Near the entrance, they also sell their own homemade sesame oil and Gwangyang plum extract! Sesame oil is ₩7,000 and plum extract is ₩5,000 — really affordable prices 🤍

They also have plenty of kids' chairs, so it's a great place to visit with children too. Extra side dishes are self-serve at the bar!

How to order the spicy galbijjim and set the spice level
At Daedae Myeonok you order via table tablet! Alongside their signature naengmyeon and kalguksu, they also serve thick charcoal-grilled seasoned meat, handmade king mandu (dumplings), galbijjim, and much more.
With three of us there, we ordered two servings of the newly launched spicy galbijjim plus arongsatae (beef shank) kalguksu. Rice doesn't come automatically, so you need to order it separately!
They said the spice level was moderate, about Shin Ramyun level, and that you can ask them to adjust the heat if needed.

Complimentary fish cake skewer soup and the side dishes
They serve a free fish cake skewer soup made with pollack broth, and the soup was seriously amazing haha. The fish cakes weren't overcooked and mushy either, totally my style 🫶 For side dishes we got pickled red pepper, kimchi, and a special soy dipping sauce for the meat in the arongsatae kalguksu.
Most importantly, the kimchi was really delicious! They said the side dishes change slightly with the season.

How does the new spicy galbijjim taste?
Daedae Myeonok's spicy galbijjim comes out already fully cooked except for the vegetables on top, so we just simmered it a bit more before eating. It was called 'spicy' galbijjim but it was milder than expected — I wished it were a bit spicier haha (I'm weak with spice, but I'd want it around buldak level ♡).
The pork ribs had no gamey smell at all, were fresh and tender, and the sweet-spicy flavor made it impossible to stop eating with rice.

There was a good amount of glass noodles too, plus plenty of vegetables like radish, carrot, and oyster mushroom. Simmering it gently on the lowest induction setting while eating let the sauce soak in more and kept it warm from start to finish, which I really liked.

Ribs really are best picked up and eaten by hand 👍👍 They were braised so thoroughly that the bones slipped right out, and the meat was so tender I honestly got confused whether it was pork or beef ribs lol. The sauce was so good I finished a whole bowl of rice without even noticing.

Arongsatae kalguksu in dried pollack and beef broth
Do I even need to say more about Daedae Myeonok's arongsatae kalguksu? Made with pollack and beef broth, the soup was deep and rich, and there was a generous amount of arongsatae (beef shank) sujuk (boiled meat) in it too.

The noodles were nice and plump and chewy, and eating them with the boiled meat and kimchi was really delicious.

It also paired perfectly with the special sauce made with chili and cabbage 💕 I'm dying to try the winter-only arongsatae mandu jeongol (dumpling hot pot) next!! It's so close to home, I don't know why I hadn't visited sooner… I'll definitely be back for family meals ✌️

My sesame oil at home just happened to run out haha, so I ended up buying two bottles at such a good price 😍 If it's tasty, I'll be buying it here from now on!!

For dessert, they even have nostalgic tricolor cone ice cream and coffee, perfect for cleansing your palate afterward ^^
Is Daedae Myeonok's spicy galbijjim worth it?
With naengmyeon, kalguksu, and galbijjim all on the menu, there's something to satisfy everyone from young kids to grandparents, making it perfect for family meals and gatherings alike. The owner and staff were also very kind, so we had a really pleasant meal. If you're looking for a gathering spot in Uijeongbu, be sure to visit Daedae Myeonok, a Gosan-dong favorite 🫶
