Saturday night craving for broth at Yun Ujae Shabu Kalguksu in Suji

Saturday evening. The weather has settled into full autumn, with a chill breeze starting to blow. On a day like this, somehow I just want hot, steaming broth. So today we arrived at 'Yun Ujae Shabu Kalguksu,' located in Suji, Yongin.

Where do you park at Yun Ujae Shabu Kalguksu?

We visited a bit later than usual, so we had no trouble parking right in front, but apparently if the lot gets busy, you can just follow the method written on the signboard above!

Even though it felt like a late time, past the dinner rush, the inside of Yun Ujae Shabu Kalguksu was bustling with customers. Okay, this is giving off a strong 'hidden gem' vibe today too...

The restaurant has a very spacious hall area, and there's also a room space like the one shown in the photo above.

There's a restroom inside the restaurant too, which is convenient, and aprons and kids' chairs are prepared as well. When it gets crowded, they've thoughtfully set up a customer waiting lounge so waiting guests can rest comfortably inside.

After finishing our order, I looked around the restaurant and surprisingly noticed a noodle-making room inside. This is where they knead and pull the dough by hand. Yun Ujae Shabu Kalguksu is truly dedicated to its kalguksu noodles.

As the broth started to boil, a kind staff member came over and carefully separated the flat kalguksu noodles into the shabu broth for us.

Why the flat kalguksu noodle wrap is a must at Yun Ujae

The thinly rolled flat kalguksu noodles cook quickly, so they were done in no time~

Wrapping the fully cooked flat noodle around meat and vegetables and taking a bite....! Wow~ this is seriously so good... T_T That was a genuine, out-loud reaction. When you order, you can choose 'half flat kalguksu + half regular kalguksu' or 'regular kalguksu only,' and I really want to recommend mixing in the flat noodles.

This is, without a doubt, a Suji favorite. At a real find like this, it feels like a waste to leave without ordering more. So we decided to extend the joyful feast a bit longer with an extra minari + mushroom platter and extra meat.

It's delicious wrapped in kalguksu noodles and dipped in the special sauce, and just as delicious eaten plain like this. Once in a while, at a restaurant you happen to stumble into, you find food so good it makes your eyes widen, and when that happens, it just puts you in a great mood! Starting today, consider me a regular here...

Finishing the meal with fried rice

After finishing the extra meat and vegetables, we tossed in the regular kalguksu noodles too! The broth had gotten quite a bit richer.

Once you've finished the noodles, leave about one ladle's worth of broth, scoop out the rest, and shake up some fried rice like this~

Wow... even the fried rice here is delicious... The rice grains still had a nice bouncy texture, and with the fragrant seasoned laver and sesame oil aroma mixed in, it was seriously delicious fried rice! A perfectly satisfying finish to today's meal.
