Yongin shabu-kalguksu restaurant with no weekday wait: Yun Ujae
In short
Yun Ujae Shabu Kalguksu Gogidong Branch is a shabu-kalguksu restaurant in Gogidong, Yongin, Gyeonggi. I had the regular-spicy red shabu-kalguksu for two and a crispy seafood pancake on a weekday evening, finishing with noodles and fried rice without waiting. A filling, great-value meal I would happily recommend again.

I've been craving so many things lately~~ I've really been wanting kalguksu (knife-cut noodles), so I went to Yun Ujae Shabu Kalguksu, a great spot in Suji, Dongcheon, and Gogidong! The portions are generous, it tastes great, and the prices are good too—such amazing value!

Weekday evening wait and parking
The last time I visited was on a weekend, and there was a bit of a wait. But when I came on a weekday evening, I could go straight in with no wait at all. You can register through Catchtable, and they let you fill out the order form in advance, so they keep waiting to a minimum. You can park right in front of the restaurant, and on weekends you can park at Puruni Daycare across the street.
Inside

Such a neat interior done in white tones! They also have private rooms, so it seemed perfect for a family gathering!

They make their own kalguksu noodles, and there was Gompyo flour displayed at the entrance, presumably because that is the flour they use!
Ordering red shabu-kalguksu and crispy seafood pancake

For the shabu-kalguksu, you can choose red or white broth. I ordered the regular-spicy red broth for two, plus the crispy seafood pancake. They provide a container for packing up leftover pancake, so you can eat without worrying about having too much left over, hahaha.

You can help yourself to kimchi and kkakdugi (cubed radish kimchi). I'm usually a napa-cabbage-kimchi person, but the kkakdugi here was perfectly fermented and seriously delicious!!
How to eat the shabu-kalguksu

The shabu-kalguksu arrived loaded with mushrooms and minari (water parsley)!

I think wrapping the meat in the flat kalguksu noodles would be nice too! Personally, I prefer regular kalguksu noodles, so I ordered those—but you can choose your noodle type!

Each person gets their own soy sauce for the seafood pancake, which was hygienic and nice.

Fried rice

Kalguksu noodles and shabu meat. You can tell at a glance that the meat looks fresh, right?

At Yun Ujae Shabu Kalguksu in Yongin, the instructions said to add half the meat before the broth comes to a boil. The directions for eating were written clearly beside us, and they even gave the induction temperature, so it was really convenient hahaha.
Meat goes in first.

The meat, mushrooms, and minari are seriously delicious dipped in the soy sauce..!!

After we'd eaten a little, the seafood pancake came out!! True to its name, the crispy seafood pancake was wonderfully crisp and packed with seafood! I really recommend ordering it. It is seriously the key item, hahaha.

Into the broth, now rich with flavor from the meat, went the kalguksu noodles~ I set the timer to 6 minutes and the induction to level 8, just as instructed hahaha. I always taste one strand at a time to see whether the noodles are done, so having a timer was incredibly convenient.

After finishing everything, we even had fried rice.. I was seriously so full... The portions are huge, and the value is absolutely crazy!!!!

I prefer it more like juk (rice porridge) than fried rice, and the instructions said to add one ladle of broth, but I added two hahaha. It was savory and delicious, and the stir-fried kimchi cut through all the richness. Writing this post is making me want to eat it again!!
For family meals or lunch
Yun Ujae Shabu Kalguksu Gogidong Branch in Gogiri, Suji, and Dongcheon-dong seems like a good choice for a family meal or for office workers at lunch too. The kalguksu is house-made, so the noodles were chewy, springy, and very delicious. At ₩11,500 per person, the value is truly excellent, and the ingredients are fresh and tasty! It would also be great for a meal after visiting near Gogiri Valley, and since this was my second visit, I recommend it as a great kalguksu spot in Suji!
