The meat is water-aged and ice-temperature-aged so it's tender and delicious, and everything from the pre-grilling service to the variety of side dishes was great!

Parking, hours, and prices?

The vibe on a weekend evening
The inside was packed with people who'd come for weekend dinner. If we'd been even a bit later, we might have had to wait. I heard it's a well-known restaurant near Rolling Hills, and it seems there's a reason so many people come here~

True to being a butcher restaurant in Hwaseong, the meat quality is outstanding.
The bright red cuts of meat seem to be beckoning you... there were so many pieces with gorgeous visuals.

Just looking at the marbling, you could roughly tell how good these would taste once grilled.

There's 'Morakmorak Taco' at the salad bar
One reason people call this a great spot near Rolling Hills might be this generous salad bar. It's a visual I'd never seen at a Hwaseong butcher restaurant before — a place where you can try the 'Morakmorak Taco.' A combination of Korean food and Mexican food?!

They even bring out free beef tartare
After you pick your meat, they pre-grill it and bring it to you while you wait. Meanwhile, they set the table so you can nibble on mukbap radish jelly and vegetables while you wait.
But they gave us 'beef tartare' (yukhoe) as a free service?! And it's chewy and savory, too.
Usually if you order this at a meat restaurant in Hwaseong-si it'd cost about ₩15,000, so this is nice haha

They also brought a bit of bracken fern (gosari), which is even tastier grilled on the pan, and wild garlic leaves (myeongi namul) to wrap it with.

Flower pork belly 450g, just right for a couple
This is the pre-grilled 450g pork belly from this Hwaseong-si meat restaurant.
When my wife and I come together, 400–500g is usually just enough to fill us up, so we picked a similar amount.
If we eat the tacos we'll be too full for meat, but this one can't be skipped.

Wrapped generously in a tortilla, it makes a perfect appetizer to whet the appetite~

They properly grill the pork belly and pile on plenty of vegetables and bracken fern.
The heat is definitely strong and the meat quality is great — even just looking at it you can tell how delicious it's going to be.

First bite with salt, then freestyle
How should you eat the first bite???

Of course, dipping it lightly in salt for the original taste is the best way to experience the meat's natural flavor!!

My wife loves wasabi, so she wrapped it with a bit of wasabi and rice, and she looked so happy hahaha

After the original salt bite, it's time to enjoy it freestyle.

You can wrap it up with pickled radish and lots of vegetables, or just dip it in ssamjang — everyone finds their own favorite style.

This style was the tastiest for me. Well-grilled flower pork belly, plenty of wasabi, and a slice of pickled radish to cut the richness — this became my favorite bite of the meal!
I had one tortilla left, so I added cilantro and wasabi to it, and it was soft and this combo was pretty great too~

We finished with doenjang stew, bibim naengmyeon, and bone broth ramen
We enjoyed a bowl of rice mixed into the tasty doenjang stew, ending the meal on a hearty note.

Still a bit hungry, we ordered bibim naengmyeon — the sauce was sweet and the noodles were chewy and springy, making it a great cold noodle dessert :)
If you love a hot ramen broth with a shot of soju, or you're just into ramen noodles, there's a separate ramen corner where you can help yourself. Rather than just boiling it in water, they prepare homemade bone broth, which felt like a special treat you can only get at this Hwaseong butcher restaurant.

And this is truly, finally, the last 'dessert.' With Sanghamokjang vanilla ice cream, our stomachs were completely full.

Since it's such a well-known restaurant near Rolling Hills, a lot of people will probably come by — they also have Chuseok gift sets ready, so if you enjoyed the meal, consider gifting one to your family too~♬

The sun set quickly and the weather was nice and cool. It felt like the lights were lit to light our way as we left^^
