After finishing my Ulleungdo trip and getting home, I suddenly craved makchang (beef or pork intestine). Even after eating so many delicious things while traveling, I guess there are foods you only start thinking about once you get home. While searching, “Is there a good makchang place nearby?” I found Baegyeom Makchang Euljiro Main Branch.
A shot of soju with properly golden-grilled makchang felt like it would melt away all the fatigue from the trip.
Finding Baegyeom Makchang from Euljiro 3-ga Station

Baegyeom Makchang is a two-minute walk from Exit 11 of Euljiro 3-ga Station. It is not immediately visible from the main road, so you need to duck slightly into an alley. The walk itself is fun, with old shops naturally mixed in among restaurants with a more current feel.

A makchang-and-soju atmosphere in an Euljiro alley

Baegyeom Makchang has an easygoing atmosphere that is great for settling in with makchang and a drink.

The old-school charm and lively bustle that are so characteristic of Euljiro suit it perfectly.

On cooler evenings, it would be nice to throw the windows wide open and enjoy makchang with that outdoor-stall feeling. The salt-aging room off to one side also caught my eye. They say salt aging further brings out the flavor and texture of the makchang.

I was considering having only makchang, but then the makchang sundae caught my eye. And it was limited quantity, too—I simply could not pass it by, haha.
As soon as we ordered, the salt pre-grilling began.

The basic sides came generously with perilla leaves, green-onion kimchi, garlic, ssamjang (savory dipping paste), and Cheongyang chili peppers—all perfect alongside makchang.


They also served soft sundubu (unpressed tofu) to gently warm the stomach before grilling the makchang. It was mild and nutty, making it nice to spoon up between bites of drinking food.

The taste of crisp-grilled Daegu makchang
The makchang sundae had a unique look, with the intestine packed full of sundae filling. Then came the plump, thick makchang, pre-grilled and served with green onion and enoki mushrooms. It was so full!

Time to grill~

The anticipation builds from the moment the Daegu makchang starts turning golden on the grill.

The outside grills up crisp, while the inside is chewy and nutty.

Dipped in salt, its distinctive rich flavor built with every chew, but rather than being greasy, the nuttiness came through first.

Grilling really matters with makchang, so I waited patiently until the exterior was crisp, then gave it a deep dip in ssamjang piled high with garlic and Cheongyang chili peppers! The savory, sharp flavor with the nutty makchang was, quite literally, incredible!

One big bite wrapped in a perilla leaf: makchang, grilled green onion and garlic, plus ssamjang! The fragrant perilla leaf with the chewy, nutty makchang is a flavor that calls for soju. 😋

The makchang sundae we ordered was a special treat, too. The filling packed inside the chewy intestine burst with juices the more I chewed! There was not even a hint of odor—just nutty richness~~ Above all, it felt even more special because it was a limited-quantity menu item.


If you keep eating makchang, it can start to feel a little heavy, but having it with the side dishes resets your palate. Then your chopsticks naturally head back toward the grill. I guess that is the power of makchang. 😃


After enjoying the deep, rich flavor of the makchang, we added cold kimchi noodle soup. Between the sweet-tangy, chilled kimchi broth and chewy noodles, it was a refreshing finish that washed away all that richness.
Euljiro has so many good restaurants and bars, but this is a place that comes to mind when you want properly good Korean-grown makchang with a shot of soju in an alley. If you love makchang in particular, I recommend ordering the classic Daegu makchang with the limited-quantity makchang sundae. Add soju to the nutty, chewy makchang, and it becomes not just a meal in Euljiro but a proper spread for drinks.
