I stopped by Fluffy Bake Shop, a Gongdeok dessert spot famous among Seoul's bakery-hoppers!

Where is Fluffy Bake Shop, and what are its hours?
Fluffy Bake Shop's hours are weekdays 08:00–18:30 and weekends 11:00–16:30. Takeout, delivery and simple payment are all available. This Mapo café sits a 3-minute walk from Gongdeok Station Exit 2.

Inside the Gongdeok dessert shop
The moment you open the door, the warmth just hits you — wood-toned display shelves and soft lighting make the pastries look even more delicious?! The interior isn't huge, but the layout is clean and easy to move through.
Seating is mostly geared toward takeout, but there's enough room to wait a moment or browse comfortably.

Why Fluffy Bake Shop bakes with Lescure butter
Fluffy Bake Shop uses top-grade French AOP Lescure butter, so the ingredients themselves set it apart. Why does that matter? Because the depth of flavor that spreads through your mouth with one bite is on a totally different level from regular butter. It's not artificial sweetness — it's the refined sweetness and nuttiness that comes from good ingredients.

They also bake fresh in-store every single day, so you get the textbook definition of crispy-outside, moist-inside..! The financiers are chewy, the madeleines are fluffy yet dense — once you try these, convenience-store or generic café desserts just don't cut it anymore...

16 madeleines and 9 financiers on the display counter
What stands out most at Fluffy Bake Shop is how neatly the desserts are arranged — watching the madeleines and financiers placed with such care on wooden trays, you can really feel how much the owner loves this craft. Even as a single owner-run café, the lineup is huge: 16 madeleines, 9 financiers, 3 canelés, and 2 egg tarts.

Madeleine tasting notes
Hwang cheese (yellow cheddar) madeleine
A thick gamtae cheese cream is sandwiched between the madeleine layers, and this is the textbook definition of sweet-and-salty. One bite and the deep cheddar-cheese flavor hits right away, gently wrapped by the madeleine's subtle sweetness — the cream isn't overly heavy, and the saltiness is strong enough that it paired way better with milk than coffee.

Espresso pecan madeleine
A strong espresso aroma hits your nose right away, and one bite reveals the bitter coffee flavor blending perfectly with the sweet batter. The generous pecans on top add a crunchy nuttiness — the texture here is genuinely a work of art. A light espresso syrup coating makes the outside slightly sticky while the inside stays fluffy — a dessert that pairs great with coffee!
Chestnut madeleine
This chestnut madeleine tastes like autumn itself, with a big whole chestnut plopped right on top — a visual that's filling just to look at. The chestnut's characteristic crumbly texture meets the madeleine's moistness, and nuttiness bursts through your whole mouth — I especially liked that the chestnut cream's sweetness was just right, never overpowering the chestnut's natural flavor.

Financier tasting notes
Apple churros financier
The outside of the financier is coated in crumble, with a sweetly stewed apple cinnamon filling hidden inside. One bite brings that distinct cinnamon flavor, followed by a churros-like crunch of sugar granules that's really charming — the sweet-bitter churros flavor and the apple's tartness come together beautifully all the way to the last bite.
Walnut caramel financier
A thin caramel coating covers the top of the financier, giving the outside a slightly chewy bite, with a generous pile of crushed walnuts on top?! One bite reveals the chewy, soft texture of the financier itself, followed by crunchy, nutty walnuts — the caramel's rich sweetness meets the walnut's heavy nuttiness for a well-balanced sweetness.
Melon financier
With its adorably melon-bread-style shape, this financier is covered in a crisp melon biscuit shell that's genuinely charming. It's not an artificial melon flavor but a subtle, refined sweetness that spreads through your mouth. The outside is crisp like a biscuit while the inside keeps the financier's characteristic heaviness — the textural contrast was excellent.
Nunettine financier
The top of the financier has that signature lattice-pattern meringue baked right on, and the texture is genuinely amazing! One bite gives you a chewy financier packed with Lescure butter flavor, so you get crisp and chewy at the same time — the apricot jam and meringue sweetness on the outside soaks softly right into the batter's interior. Genuinely delicious...

If you're looking for a Seoul bakery café, I genuinely recommend Fluffy Bake Shop in Gongdeok. The madeleines are seriously insane — you need to buy them all.
