My boyfriend and I were on a date around Seongsu, Ttukseom, and Seoul Forest and got a craving for something sweet, so I looked up a nearby café. Turns out there's 5to7 Seongsu Main Branch, famous as a soufflé spot. So we headed straight there haha.

What 5to7 Seongsu looks like inside and out

5to7 sits tucked in a Seongsu backstreet. The red brick building exterior caught my eye first. It's not right on the ground floor — you go up a side staircase to the entrance.

The interior has a wood-tone atmosphere. There are seats here and there with a full picture-window view, which gave a really open feeling. The inside was pretty quiet, and it was a good café for having a low-key conversation over dessert. If you're craving soufflé after a walk in Seoul Forest, this would be a good spot!

This isn't a small Seongsu café — you get to use a wide space from the 1st floor up to the 4th floor rooftop terrace. Thanks to the natural light coming through the picture windows, the interior felt bright overall, and looking out you could see the Seongsu backstreets and trees, which kept it from feeling closed in.

We visited around 2pm on a weekday, and since we wanted a window seat on the 2nd floor, we sat at a nearby table while waiting for our order. Right as our menu came out, we managed to grab the seat we wanted! With weather this cool lately, I thought eating dessert on the outdoor terrace seats would be even better. Apparently everyone else thought the same — the terrace seats on every floor were full!

Fig soufflé, 22,000 won: the look comes first

Soufflé pancake is made to order, so we had to wait about 15–20 minutes. Its presence was even bigger in person than in photos. There's whipped cream on top of a thick two-layer stacked soufflé pancake, and the edge of the plate is packed with in-season figs. Since the figs surround the pancake, it was easy to eat a slice with a piece of fig each time haha. The plating was pretty enough that it felt almost a shame to eat, and it was the kind of visual that made me keep taking photos.

Can you feel how fluffy the pancake looks? Haha. Stacked in a thick two-layer, it looked fluffy just from the visual alone.

I cut off a piece and ate it together with the whipped cream and fig — the soufflé itself wasn't so much sweet as it had a subtle, savory egg flavor. With the soft cream, the fig's gentle sweetness, and the little pop of the seeds, eating soufflé + cream + fig together was by far the best combination! The flavor felt noticeably different eating the soufflé alone versus with the fig.

The sauce added over the fruit and cream brought a tangy note, so the sweetness overall didn't feel one-note. Even people who aren't into sweets could probably enjoy this just fine! What I liked most was that the fig wasn't just a few decorative slices — it was generously piled around the pancake. If you like seasonal fruit, this is a dish worth trying once during fig season.

Lemon myrtle tea, 8,000 won

This is the iced lemon myrtle tea my boyfriend ordered, since he's usually a tea person. The first sip had a refreshing lemony aroma, and it left my mouth feeling clean. It paired better with the soufflé than I expected!

When you keep eating sweet dessert, you can get a bit tired of it partway through, but a sip of lemon myrtle reset my palate, making it good to alternate with the soufflé haha. Personally, I think this kind of refreshing tea pairs well with cream-based desserts like soufflé!

Dutch cold brew americano, 6,000 won

Of course, americano is the best pairing for a soft, sweet dessert like soufflé! 🖤 The Dutch cold brew had that distinctly heavy yet clean quality, and eating it alongside the cream, the coffee's bitterness cut through the dessert's sweetness! It was a sweet-bitter-sweet-bitter combo I could've kept eating endlessly, haha.

Personally, both the fig soufflé + lemon myrtle combo and the fig soufflé + Dutch americano combo were good. The tea leans toward refreshing your palate, while the coffee leans toward cutting the cream's sweetness — so if you can't do coffee, lemon myrtle would work just as well.

How to eat a 5to7 soufflé while it's at its best

Seongsu's 5to7 is known for soufflé. As I ate the fig soufflé, the method I liked best was not eating the soufflé alone, but piling on fig and whipped cream together. Try the fluffy texture of the pancake by itself first, then add a piece of fig with the cream on top — the flavor shifts a bit. Especially with the moist fig flesh and the soft soufflé texture coming together, the dessert felt much more layered!

Also, since soufflé is made right after ordering, it's good to factor in the 15–20 minute cook time when you visit — but it was nice getting it warm and fresh. This suits a leisurely day of walking Seoul Forest and relaxing at a café better than a day packed with a tight next schedule.

What stuck with me most from this visit was, of course, the fig soufflé. Eating the fluffy two-layer soufflé with whipped cream and in-season fig together brought out the combination even better than eating each on its own. Pairing it with lemon myrtle or Dutch americano also kept the dessert's sweetness in check.

Above all, since it's a multi-floor space, I felt this café suits taking your time chatting over a slow visit better than a quick in-and-out dessert stop near Seoul Forest. Next time I'm definitely going back for the pearl crème brûlée soufflé, or the strawberry soufflé once strawberries are in season in winter!
