Seongnam grill house: aged pork belly and kimchi noodles, Mat Chandeul
In short
Mat Chandeul Wang Sogeum Gui Moran Branch is an aged raw pork barbecue restaurant near Exit 4 of Moran Station in Seongnam, Gyeonggi. Two diners ordered two servings of aged pork belly (32,000 won), one serving of aged fresh pork neck (16,000 won), rice and kimchi-rolled noodles (kimchi mari guksu), and the staff grilled everything at the table; the thick-cut belly stayed tender and the cold kimchi noodles cut through the richness. My meat-loving other half and I were trying to decide on lunch and, as usual, ended up going for meat again. This time we visited Mat Chandeul Wang Sogeum Gui Moran Branch, a well-known pork belly spot near Moran Station.

I've already been here a few times, and it's the place that naturally comes to mind whenever I'm craving thick-cut pork belly haha. One big plus is that a staff member grills the meat for you, so you can just relax and eat.
Group tables, the dining room and the menu
Mat Chandeul Wang Sogeum Gui Moran Branch has a very spacious dining room, big enough for company dinners or family gatherings. Group seating is available if you make a reservation ahead of time.

The menu covers a range of cuts, from pork belly to pork neck to pork jowl, so you can pick whatever suits your taste. We didn't even need to think twice — we started with two servings of aged raw pork belly. And then as we kept eating... 😅 of course two servings weren't going to be enough. We added a serving of aged fresh pork neck, plus rice and kimchi-rolled noodles.

Why the thick-cut aged raw pork stands out
Between the two of us we ended up eating three servings of meat plus rice and noodles — we really went all in haha.

The moment the meat arrived, it already looked amazing! Every time I order here I notice the same thing — the thickness is what really gets me.
Thin-cut pork belly is delicious too, but I actually prefer it sliced this thick. As soon as it hit the grill, the sheer visual of that thick belly already looked incredible ❤️

Side dishes and the free acorn jelly soup
The side dishes were well-suited to eating alongside the meat, and the portions were huge.

They also serve muk-sabal (acorn jelly salad in cold broth) on the house, and it completely quenched our thirst. I really recommend the pork belly and muk-sabal combo.

Staff grilling service at your table
When you order meat, a staff member grills it for you, so all we had to do was wait and then dig in ❤️

They grill it golden-brown on both sides, cut it into bite-sized pieces, and then finish searing the cut sides properly too — golden and crisp outside, with the juices still sealed in, so that first bite delivers a rich, savory burst ❤️❤️
It was especially delicious when I got a bite with both the fat and the lean meat together.

Maybe because it's aged pork belly, even the thick cuts had no toughness at all — just soft, tender bites 👍

Grill the aged kimchi on the pan, always
It's delicious with just a light dip in salt, and just as good with wasabi! And pork belly with grilled aged kimchi (mukeunji) — can't skip that haha. Make sure you grill the aged kimchi on the pan!
When the aged kimchi gets lightly browned in the pork belly fat, then you top it with a slice of pork belly, a bit of shredded chili, and a touch of wasabi, and eat it all in one bite... that combination is seriously good. The aged kimchi cuts right through the richness of the pork belly, so you just keep reaching for more.

Aged pork belly and aged pork neck, half and half
Personally, I'd also recommend ordering pork belly and pork neck together. Pork belly is rich and full of juice, while pork neck has that clean, lean flavor unique to lean cuts — switching between the two partway through made things feel fresh again.

The pork neck in particular is also cut quite thick, which can turn dry if grilled poorly, but since the staff grill it for you, it came out golden-brown outside and juicy inside.

Order the kimchi-rolled noodles
This is a menu item I'm genuinely fond of at Mat Chandeul. Kimchi-rolled noodles!!! If you come here, you absolutely have to order this.

Eating meat for a while can leave your mouth feeling a bit greasy, and that's when a refreshing bite of kimchi-rolled noodles completely resets your palate. Tangy, cool broth with chewy noodles!!!
