In short

Suwanjigu Form menu and what we ordered

Here's the menu.

Seasonal menu information at Suwanjigu Form

There are seasonal menu items too~ We ordered the squid-ink pancetta pasta, the octopus dish, Korean beef tartare, and the summer special pork tenderloin dish!

Wine list and wine display at Suwanjigu Form

They also have a good variety of wines, which would pair nicely!

Korean beef tartare

Korean beef tartare served with brioche

The first dish we tried was the Korean beef tartare, and it was art itself just visually. Korean beef tartare is placed on soft brioche bread, then paired with smoked cheese sauce, butternut squash purée, and fig jam. It's nutty yet sweet-savory, filling your mouth completely — I knew right from the start we'd come to the right place. Eating it on the bread is unreal.

The octopus dish, the best of the meal

The second dish was the octopus dish!

Octopus dish with carrot purée and roasted napa cabbage

This was the menu item my friends all insisted I absolutely had to try. Octopus grilled crispy on the outside and tender inside sits on top of carrot purée, savory peanuts, and golden-roasted napa cabbage.

Cut into bite-size pieces with scissors, the octopus just melts — I couldn't believe octopus could be this tender. Eating it together with the purée and napa cabbage creates a balance of flavor that's genuinely next-level. Among restaurants in the Suwan district, it's rare to find this level of delicate cooking sequence and flavor. This octopus dish — seriously, if you don't order it, we can't be friends. Best of the best ⭐️⭐️⭐️⭐️⭐️

Summer-season pork tenderloin

Next we tried the pork tenderloin dish, a summer seasonal item.

Summer seasonal pork tenderloin dish with spicy romesco sauce

On a plate generously coated with spicy romesco sauce sits moist, tender pork tenderloin, topped with pickled cucumber for a refreshing kick. The soft tenderloin paired with the spicy, exotic romesco sauce felt like it woke up my summer appetite. The sauce was so good I scraped the plate clean hahahahaha.

Squid-ink pancetta pasta

Lastly, I had the pancetta pasta, which easily stands out among the pasta dishes in the Suwan district.

Squid-ink pancetta pasta

This pasta is made with squid-ink spaghetti noodles added to a deeply flavored sauce built from house-made pancetta, pecorino cheese, butter, and garlic.

Mix it all up 💖 The rich, thick sauce blends with the squid-ink noodles into an addictive flavor that has you scraping the bowl clean. If you're looking for a great pasta spot in the Suwan district, just come here ㅜㅠㅜㅜㅜ

It's genuinely so delicious, and hands down one of the best restaurants in Gwangju — you have to try it.

Pickles and melon sherbet

Crunchy pickles for cleansing the palate

This is the crunchy pickle that refreshes your palate between bites!

Melon sherbet served at the end of the meal

After the meal, the melon sherbet that refreshes your mouth with a burst of citrus-like brightness showed real attention to detail. It felt like it reflected the season! Apparently there's white wine mixed in! But no alcohol content~~~
