Migeum dak hanmari restaurant: self-mix sauce and cabbage refills

In short

Sugyeokok Bundang Migeum is a dak hanmari (whole chicken hot pot) restaurant on Migeum-il-ro in Bundang-gu, Seongnam. Ordering the two-person set late on a Monday, the meal at Sugyeokok started with chicken neck and scorched-rice porridge, moved on to chicken dipped in a self-mixed sauce of dadaegi (chili seasoning paste), minced garlic, mustard and soy sauce with cabbage refills, and finished with kalguksu (hand-cut noodles) boiled in the broth for about 6 minutes. The verdict: you no longer need to travel to Dongdaemun in Seoul for dak hanmari.

Menu and what comes in the two-person dak hanmari set

At Sugyeokok Bundang Migeum you order using the tablet on the table~ It even shows the number of people so you order the right amount haha. The set menu is really well put together — you get chicken neck rice porridge + dak hanmari + noodles.

There are three types of dak hanmari — original, neungi mushroom, and hangover-relief! I ordered the two-person set. There are also side dishes like cheese potato pancake and seasoned chicken salad!

Hair ties provided at the table

And they had hair ties ready at the table!! The owner has such great sense 👍

Chicken neck and scorched-rice porridge plus side dishes

Table setting with dak hanmari, chicken neck rice porridge, and side dishes

They set the table with the dak hanmari, the chicken neck rice porridge, and side dishes — the pre-meal porridge had so much sesame oil in it that the nutty smell alone made it seem delicious!

While the dak hanmari was boiling, I could eat the porridge to take the edge off my hunger! The pre-meal porridge is made with chicken neck and broth — it had that nutty flavor with bits of chicken meat mixed in, so tasty! Such a special treat haha. Highly recommend the porridge!! haha

Instructions on the table for how to enjoy dak hanmari

How to mix the dadaegi, mustard and soy sauce dipping sauce

At Sugyeokok Bundang Migeum, the tables have instructions on how to enjoy the meal! Just follow those haha. While the dak hanmari boils there's another job to do haha — making the sauce!

Dadaegi, minced garlic, and mustard for the sauce

Plate of dak hanmari sauce with cabbage added

Mix dadaegi (Korean chili paste) + minced garlic + mustard + soy sauce, then add cabbage, and you get a spicy, tangy, and pungent sauce that goes perfectly with everything!!

Finished spicy and tangy cabbage sauce

This sauce was so good I kept thinking about it even after I got home... They said the dadaegi and minced garlic are both domestically sourced, so maybe that's why it tasted even better... I refilled the cabbage and ate it again! Such an addictive sauce..!!

How to eat dak hanmari in order, and how it tastes

At Sugyeokok Bundang Migeum, they recommend eating in this order: rice cakes first > breast meat > thigh meat! While I was making the sauce, the food finished boiling! They set a timer for us, and when it goes off, it's time to eat haha. If you boil the rice cakes too long, the starch comes out and the broth can get cloudy~

The chicken was so tender and soft! Eating the chicken together with the cabbage from the sauce recipe was such a perfect combination!! I usually don't like chicken thigh because it's fatty, but here it's cooked so thoroughly that it was soft without being greasy — nice and clean tasting~

Since the chicken is so tender it can get a bit plain after a while, so eating the spicy, tangy, pungent sauce right then hit the spot haha. And the broth was so refreshing and clean haha — the chicken stock had really infused into it, so delicious~ I sometimes crave this kind of healthy dish!

Finishing with kalguksu noodles and a broth refill

Once you've mostly finished the chicken, they bring out the noodles! Oh, and they refill the broth too~ As you keep boiling and eating, the broth reduces and the flavor gets more concentrated haha. If the broth runs low while you're eating, you can ask for a refill~

Noodles added into the chicken broth

You boil the noodles for about 6 minutes before eating, and setting the timer here too makes it easy haha. Boiling the noodles in the chicken broth was so delicious! Tip here — you can dissolve some dadaegi in to make a spicy version of the noodles!!
