Thanks to the deep umami coming from the ingredients themselves rather than strong seasoning, I was able to finish it cleanly down to the last spoonful.

Yuzu chicken thigh: bright citrus with clean grilled chicken

Cooked with a combination of steaming and smoking, the yuzu chicken thigh came out crisp on the outside and full of moist juices inside.
