Interior décor around Baut's first-floor counter

The first floor at Baut has full-length windows, which gave it a really open feel with great natural light — a nice atmosphere for enjoying brunch. You order at the counter, and I loved being able to pick desserts like the chocolate gâteau or banana pudding by eyeing them in the case first.

I headed up to the second floor via the inner staircase. Baut placed potted trees and cacti throughout, giving it a lush green interior that felt more relaxed and healing.

Second floor: the laptop and reading seats at Baut

If the first floor felt like enjoying brunch in an open, window-lined lobby, the second floor was more of a standard café space. Quite a few guests up there were working on laptops or reading.

There are also clean restrooms on both the first and second floors, which made things convenient.

Third floor: the group room for larger parties

The third floor is similar to the second floor's café layout, but also has a dedicated room with group seating — great for gatherings with a bigger crowd.

Table spread with potato cream soup, ciabatta sandwich, and ades at Baut

We ordered the cauliflower potato cream soup, ciabatta sandwich, lime ade, and hibiscus berry ade.

Cauliflower potato cream soup, 13,500 won

Cauliflower potato cream soup served with baguette

I really love soup, so if there's a soup on the menu I basically have to order it! The potato cream soup came topped with cauliflower, kale, and almonds, plus a baguette to go with it.

A spoonful of rich potato cream soup

The soup combined the nutty flavor of the potato with a smooth, creamy texture — rich yet soft, a perfect combination that made me want to try more of Sincheon-dong's brunch spots.

A piece of baguette dipped into the soup

The lightly charred cauliflower looked so appetizing, and dipping the accompanying baguette generously into the soup let me enjoy another layer of flavor.

Ciabatta sandwich, 11,000 won — where the blueberry jam comes in

A plate with Baut's ciabatta sandwich

Just like I love soup, I love ciabatta among breads, so I ordered the ciabatta sandwich without a second thought.

Cross-section of the ciabatta sandwich packed with prosciutto and vegetables

The ciabatta sandwich was packed inside with basil pesto, blueberry jam, tomato, romaine, onion, prosciutto, and cheese, so one bite gave a burst of layered flavors.

Inside of the ciabatta sandwich showing the blueberry jam spread

What stood out was the blueberry jam spread right under the top piece of ciabatta — so the very first thing you taste on your first bite is the ciabatta-and-blueberry-jam combo, and that was surprisingly the kick! After the initial blueberry sweetness came the tomato and fresh vegetables, and the finish left the salty savoriness of the prosciutto and cheese lingering, which made me want another bite right away haha.

Hibiscus berry ade and lime ade, 5,800 won each

Two glasses of hibiscus berry ade and lime ade

Both ades were refreshingly light, pairing well with the soup and sandwich as part of a brunch spread. The lime ade wasn't overpoweringly limey, so it was easy to drink and refreshingly tart, while the hibiscus berry ade blended hibiscus tea with the sweetness of berries, giving it a slightly deeper flavor than the lime ade.

Final verdict: what kind of day suits Baut?

Baut, a brunch café near Dongdaegu Station, is a Sincheon-dong café where each of the three floors offers a different mood, perfect for a leisurely lunch brunch. With a varied menu and decaf coffee available, I could order to my taste, and I was especially won over by the rich flavor of the cauliflower potato cream soup — next time I want to try the veggie hummus and the green onion jambon sandwich 😄 Given its easy access from Dongdaegu Station and Shinsegae Department Store, I'd recommend Baut for a lunch brunch near Dongdaegu Station.
