I'm pretty much a sucker for any (tasty) sweet dessert, but if I had to pick a favorite, soufflé pancakes would definitely be up there haha. So when I heard there was a Hongdae soufflé spot, I fell for the photos instantly and went straight there. This is Think Fruit, near Hongik University Station.


Does Think Fruit still make soufflé late at night?
Even though it's a dessert café, Think Fruit stays open pretty late, so it's perfect for when a dessert craving hits in the evening.

I was worried they might be sold out of soufflé since I came so late, but they had tons of fruit prepped and ready! Everything looked super fresh. The interior was spacious and clean too, though it was hard to get good photos since there were a lot of customers. Every single table had a soufflé on it, no exceptions.

Looking at the menu, they have soufflé pancakes and parfaits made with seasonal fruit. I went back and forth between the fig soufflé and the peach soufflé, but I was somehow craving peach that day, so peach soufflé it was! Besides that, there's a wide range of coffee, tea, lattes with Häagen-Dazs ice cream, and smoothies.

They told us the soufflé is cooked fresh the moment you order, so it could take a bit (they said 20-30 minutes). But honestly it didn't feel like we waited that long. You can also choose whether to get your drinks served with the soufflé or beforehand.

My friend loves milk tea so much that she basically always orders it wherever we go...! Here it comes with Häagen-Dazs vanilla ice cream on top. I expected it to be super sweet, but it was less sweet than I thought, with a subtle tea aroma and flavor. It seemed like they designed it knowing the sweet ice cream would melt in, which I liked. If you're expecting a strong milk tea flavor it might fall a bit short, but it was smooth and just sweet enough to be delicious.

Iced café latte, 6,000 won
Iced café latte for ₩6,000. I always go for a café latte... The bean flavor was quite bold and bitter with a nutty richness that was exactly my thing. Taking a bite of the sweet, soft soufflé pancake and then a sip of the bitter latte gave the perfect balance.

The peach soufflé's visuals alone were no joke. A whole peach sits right on top, and there are more generous peach slices piled up on both sides.

If you peek inside, there's Häagen-Dazs vanilla ice cream and two fluffy soufflé pancake layers, topped with a huge scoop of cream. The cream wasn't that slick vegetable-based kind — it had real nutty richness to it. Can't say for sure, but I'm guessing it was dairy cream.

Both the cream and the soufflé pancake melted away the moment they hit my mouth — that nutty, gently sweet flavor was so good. Neither one was ever overly sweet. And the pancake still had that distinctive fluffy egg flavor. It reminded me of ogisan cheesecake... I'm a huge fan of that kind of thing.


Anyway, you get this strong egg flavor that then just melts away in your mouth like a cloud!!

Firm and soft peach slices served together
The peach slices on the side are ddakbok (firm peach). Ddakbok versus mulbok (soft, juicy peach) — people seem pretty divided on this, kind of like the sauce-on-top-versus-dip debate for tteokbokki... I just like it because it's peach. Both are tasty so I don't really care. If I had to pick, I lean slightly toward ddakbok, so this was a total win for me! But since the soufflé, cream, and ice cream all melt away softly while the peach is firm, some people might find that texture contrast not to their taste.


The whole peach on top is the soft mulbok kind. And it's filled with cream cheese inside, which is a seriously great combo. Soft, juicy peach flesh paired with cream cheese that has a gentle tang! It really felt like eating a high-end dessert.

Is Think Fruit worth it? Final verdict
Think Fruit, a Hongdae soufflé favorite! The peach soufflé with the whole peach, Häagen-Dazs ice cream, and the fluffy soufflé-and-cream combo was excellent, the latte was bold, bitter, and nutty, and the classic royal milk tea had a subtle sweetness and tea aroma that paired well with dessert — everything we ordered was genuinely delicious. The soufflé quality in particular was impressive, so I'm fully convinced this is a top Hongdae soufflé spot... Plus the portions were generous overall, and given how much peach they pile on, I felt the price was reasonable. If you're looking for a Hongdae soufflé café, I highly recommend it!
