We were out with the family and by evening the wind had turned pretty chilly. That's exactly when you crave something hot and brothy to warm you up. We all shouted "kalguksu for dinner tonight!" and headed to Daseon Kalguksu Main Branch, a well-known spot in Suwon.

The warm, old-school exterior instantly gave off that long-standing neighborhood favorite vibe.


The sign reads "1990, the taste of hometown tradition," and next to the entrance there are big plaques and banners for TV appearances on shows like SBS Live Today and tvN's Amazing Saturday — it got me excited before we even walked in.

Walking into Daseon Kalguksu Main Branch, we were greeted by a clean, cozy wood-toned interior. The space is spacious and well-kept, with generous spacing between tables — a warm setup that's perfect for a family meal.

They neatly set the table with clean salted shrimp to go with the pork and a special soy sauce for the pancake.

Barley rice before the meal: adult and children's bowls
Before the food arrived, they brought out barley rice first — Adult version: On top of the bouncy barley rice they added crisp seasoned radish salad, a drizzle of vinegared gochujang and sesame oil. Mixed together it was nutty yet tangy-sweet, and it really woke up my appetite.

Kid version: Barley rice with sesame oil and a generous topping of seaweed flakes. My son said it was so good he finished a whole bowl before the rest of the food even came out.

The broth, loaded with clams, chives, and seaweed flakes, was so deep and rich that one sip instantly melted away the chill from our bodies. The noodles kept a lovely chewy bounce and stayed delicious to the very last bite without going soggy.


Side dishes: geotjeori (fresh kimchi) and seasoned radish salad
The basic side dishes were fresh cabbage kimchi (geotjeori) and seasoned radish salad — and let's be honest, kimchi is the heart of any kalguksu place. The spicy, tangy geotjeori kept its crunch and paired beautifully with the soup, while the crisp radish salad was packed with savory depth.

The boiled pork (suyuk) in the set had zero gamy smell and was moist and tender.

Putting a piece of tender pork on top of the chewy kalguksu noodles and eating them together in one bite was a real treat — the savoriness and the bouncy noodle texture worked so well together.

When I wanted to taste the pork's plain, clean flavor, I just added a bit of salted shrimp on top, which cleanly brought out the meat's savoriness.

Haemul pajeon (seafood and scallion pancake)


Golden-brown and crispy, this pancake had the kind of flavor that keeps you reaching for more even when you're already full. Dipping it in the soy sauce that came with it, I got a faint but lovely burst of shrimp aroma and flavor that really brought out the pancake's umami.

From the thoughtfully made barley rice to every single dish, the quality was high — this is a Suwon favorite I know I'll be craving again once the weather gets a little colder.
