200-hour aged hire katsu at a Suwon Station tonkatsu spot: Gohobi
In short
Gohobi Katsu is a Japanese-style tonkatsu restaurant in Paldal-gu, Suwon, a short walk from Suwon Station. The writer ate the hire katsu set (₩14,000), made from domestic sow pork aged over 200 hours, and the kimchi cheese nabe tonkatsu (₩15,000) at a tachi counter wrapped around the kitchen. The hire katsu melted in the mouth and the nabe broth cut through the richness, making this a spot that works equally well for solo diners and dates.

Hello fellow food explorers! Today I want to introduce a place near Suwon Station that really deserves to be called the textbook definition of tonkatsu (breaded pork cutlet). It's Gohobi Katsu. People in the know already whisper about this Suwon Station favorite, and I finally went to check it out with high expectations.

The area around Suwon Station has so much foot traffic and so many restaurants that it's genuinely hard to pick where to eat, right? If you're after a proper tonkatsu with that perfect crispy-outside, juicy-inside balance, Gohobi Katsu is a fantastic choice.
Finding Gohobi Katsu from Suwon Station and the storefront
Let me start with location. Gohobi Katsu is within walking distance of Suwon Station, so it's very easy to get to.
Check the map for the exact spot. (Free parking is available too, so if you're driving, it's an easy visit.)

Here's the exterior of Gohobi Katsu inside its building. The clean, modern sign and the stylish wood-toned entrance really stand out. In front of the entrance there's a menu board with illustrations and the hours: open at 11am, closing at 8:30pm, no break time — good to know before you go. Doesn't it already give off proper-restaurant energy from the entrance alone?

A tachi counter around the kitchen — good for solo dining and dates alike
Walking in, I was greeted by a cozy, upscale interior. What stood out most was the tachi (counter) table wrapping all the way around the kitchen. It's completely comfortable for solo dining, and just as good for sitting side by side with a friend or a date. With chandelier lighting on top, the atmosphere was really lovely — I'd recommend it as a date spot too.
A commitment to domestic sow pork aged 200 hours
Before ordering, I looked over the restaurant's info and could feel Gohobi Katsu's clear commitment to quality. They only use domestically raised sow pork, and all ingredients are said to follow a same-day-use principle.
What's most surprising is that they hand-trim refrigerated pork aged over 200 hours themselves. Since cooking only starts once you order, it takes about 10–15 minutes — but that should mean fresher meat and the best possible flavor, right? It was also reassuring to know they always use clean oil.

What we ordered and the prices
The menu had a solid range of katsu types and noodle dishes — rosu katsu (pork loin), hire katsu (pork tenderloin), premium extra-large rosu katsu, exactly what you'd expect from a specialist. After some deliberation we ordered the restaurant's signature hire katsu set (₩14,000) and, craving something hot and soupy, the kimchi cheese nabe tonkatsu (₩15,000).

The set menu comes with rice, a light soup, and salad.
Hire katsu (tenderloin): melts in your mouth
After a short wait, our order arrived piece by piece — and the visuals alone were striking.

First up, the hire katsu (tenderloin). Can you see the rosy juices pooling in the round, thickly sliced cross-section of the tenderloin katsu? Is this the power of 200 hours of aging? It looked tender just from the sight of it. The cabbage salad on the side looked generous and refreshing too.

I picked up a piece with my chopsticks, dipped it in the sauce, and tried it. Wow — 'melts in your mouth' is exactly the right phrase. Being tenderloin, it was truly soft and the juices burst out with every bite. The breading was thin but still stayed crispy, so the textures worked in perfect harmony.
I'd also recommend trying it with just a light dip of salt to taste the pork's natural flavor. Adding wasabi gives it a clean finish too.
Kimchi cheese nabe tonkatsu: spicy and satisfying
Next up was the kimchi cheese nabe tonkatsu, a dish anyone of any age would love. It arrived still bubbling, which immediately caught the eye.

With snow-flake cheese and green scallions scattered over the red broth, it looked absolutely delicious.

I took a spoonful of the broth first — it had a spicy, tangy kimchi jjigae (kimchi stew) base that cut right through any richness. It was rich enough that it could easily double as a hangover cure.

Lifting the tonkatsu out of the nabe (hot pot), the katsu had soaked up the broth and turned moist yet tender — the texture was fantastic. With the cheese stretching out and adding its own nuttiness, it was seriously dangerous for how much rice it made me eat.
Crispy tonkatsu is great, but sometimes this moist, spicy nabe style is just as charming. It's a menu that will make you polish off a whole bowl of rice without noticing.
Overall thoughts and visit tips

Both the supremely tender hire katsu and the spicy, filling kimchi nabe were completely satisfying.
