Boiled pork bossam at Daseon Kalguksu, near Suwon Station, Sunday noon

In short

Daseon Kalguksu Main Branch is a 25-year-old kalguksu and bossam restaurant on Hyanggyo-ro near Exit 8 of Suwon Station in Suwon, Gyeonggi. Visiting on a Sunday at noon meant a 5-minute wait, then a large boiled pork bossam platter, kalguksu, a barley rice appetizer, and cool geotjeori kimchi. The bossam sits over steam like a steamer basket the whole meal, staying moist enough to explain the wait.

🍽 What we ordered

  • ☑️ Bossam (large) ₩39,000
  • ☑️ Kalguksu (1 order) ₩10,000
Kimchi and mu-saengchae served as basic side dishes

First out are kimchi and mu-saengchae (spicy radish salad) — you know that kimchi already looks delicious without even tasting it, right?!

This isn't baechu (napa) kimchi, it's yal (young cabbage) kimchi haha.

It's cool, refreshing, and clean — the classic kimchi pairing for kalguksu.

🍚 A barley rice appetizer to wake up your appetite

A bowl of barley rice served as an appetizer

Before the main dishes arrive, the house specialty — barley rice — comes out as an appetizer! 🌾

Barley rice mixed with mu-saengchae and gochujang

Mix it up with the crunchy mu-saengchae and savory gochujang (chili paste) served alongside, and it's the perfect appetite-opener to start the meal.

The bursting texture of the barley rice paired with the sweet-spicy seasoning is so good that waiting for the main dishes never feels boring.

🥓 Boiled pork bossam (large) that melts in your mouth

A generous spread of large bossam boiled pork

The large bossam platter is the kind of portion that makes you gasp first! 🍖

Boiled pork with a good ratio of fat to lean meat

The pork has zero gamey smell and is boiled to a tender softness — the fat-to-lean ratio is just right, so the texture isn't dry at all, it's tender and bouncy, absolutely insane.

Cool geotjeori kimchi served with the boiled pork
A slice of boiled pork topped with bossam kimchi

Kimchi matters at a kalguksu-bossam place, and this cool, fresh geotjeori (fresh-tossed kimchi) is genuinely delicious. I even refilled it!

Add the boiled pork and bossam kimchi together and the savory depth goes up a whole level haha.

Ssamjang and shrimp sauce brought on request
The bossam kept warm steamer-style over steam

I asked for ssamjang (dipping sauce) too, and both the shrimp sauce and ssamjang go well with the pork haha.

It's kept over steam from below the whole time, so it stays warm throughout — like a steamer basket! That's why it stays so moist 💕

(The boiled pork's moistness is unreal 🤭)

🍜 Deep, refreshing kalguksu

A bowl of clam-broth kalguksu

The kalguksu served alongside the bossam has a clean yet refreshing broth flavor that's outstanding.

It's a rich clam broth, so you can't help but go 'ohhh~' lol.

Chewy kalguksu noodles soaked in broth

The soft, chewy noodles are packed with all that rich broth, so slurping them down is an amazing texture.

The noodles alone are so good ㅠㅠ

Geotjeori kimchi placed on top of kalguksu noodles

Especially when you put a bit of the cool geotjeori kimchi on a bite of kalguksu — the balance is absolutely perfect!

Now I fully understand why there's a wait haha.

✍️ Final verdict

From the appetite-opening barley rice appetizer to the boiled pork and kalguksu backed by 25 years of experience — if you want a consistent, carefully made meal near Suwon Station, I strongly recommend Daseon Kalguksu Main Branch 👍💕
