They only use Saecheongmu rice milled within the last two weeks, so the grains don't fall apart easily and keep good bounce — meaning the shari, the very essence of sushi, actually tastes great. Through a low-temperature aging technique that brings out deeper flavor than live fish, each type of fish goes through its own optimal aging time, giving you chewier, more umami-rich sushi. That's apparently the secret behind this Buldang-dong favorite.

The owner puts cleanliness and hygiene first, running an open kitchen so the whole cooking process is transparent, and following a rule that all ingredients are used up the same day — which made it reassuring to enjoy the sushi. The clean, comfortable space and service also made it perfect for eating solo.

Monkfish liver — sometimes called sea foie gras — piled generously onto a gunkan roll. Loaded on without holding back, the ankimo filled my mouth and made me happy.

I additionally ordered tuna sushi, plus Japanese-style egg sushi made with domestic eggs aged in mirin for sweetness. Being able to add these à la carte was a nice touch — overall, far more satisfying than a cheap conveyor-belt sushi place. A solid Buldang-dong, Cheonan favorite.
