Suwon beef restaurant with a window water garden: Jipbul Taebaek
In short
Jipbul Taebaek Suwon Ingye Branch is a prime rib (udae galbi) restaurant in Ingye-dong, Suwon, near Suwon City Hall, where the beef is first seared over a straw fire. At lunch the order was marinated prime rib for two, and a staff member grilled it at the table while guests compared four house sauces one by one: aged soy sauce, black sesame salt, mushroom and angelica. Straw-scented beef eaten beside the window, looking out at the green water garden, is what makes Jipbul Taebaek worth the visit.

A straw-fire beef specialist restaurant in Suwon's Ingye-dong caught my eye, so I went for lunch to try it out.
Jipbul Taebaek Suwon Ingye Branch: a pond out front, minutes from Suwon City Hall
Jipbul Taebaek Suwon Ingye Branch is located near Suwon City Hall, so it's pretty accessible. The address is 1115-18 Ingye-dong, Paldal-gu, Suwon.

The exterior caught my eye from far away — even in the middle of the city, there's a small pond set up in front of the restaurant, which gave it a really distinctive vibe.
What's on the menu, from prime rib to straw-fired pork belly

The menu had a variety of meat options including prime rib and whole pork belly, and I heard the restaurant has previously been selected for the Blue Ribbon Survey.

They also run a straw-fired lunch set course at lunchtime, and it seemed like a lot of nearby office workers come here for lunch.
Inside Jipbul Taebaek: a beef restaurant with atmosphere

The interior had dimmed lighting, and overall it felt clean but comfortable, a good place to sit and eat.

It leaned toward a mood good for really enjoying the meat, and since the outside is open, the window seats also had a view of a green water garden, which was an extra plus.
Marinated prime rib for two, cut from ribs 6 to 8

There were plenty of menu options like straw-grilled pork belly, pork neck, and whole pork jowl, but since we came for beef, we ordered marinated prime rib for two. I heard the prime rib uses flower rib meat from the No. 6–8 cuts, some of the tastiest parts of the beef.
Straw-fire searing starts the moment the order goes in
As soon as we ordered, I could see the meat being grilled over straw fire back in the kitchen — a whole rack of ribs being smoked.
The prime rib, first grilled over straw fire, was then grilled again right at our table by a staff member. Watching an expert's hands at work was on a completely different level from us grilling it ourselves.
The staff member grilled it to just the right doneness and placed it on our plates, so all we had to do was enjoy it comfortably. Taking a bite right away, the juices were still moist and the distinct straw-fire aroma spread through my mouth — definitely a different flavor from ordinary beef. The kind of bite that makes you say 'delicious' the moment you taste it.

All the cooked meat was placed on top of the rib bone, so we could eat it at exactly the right doneness.
A silver tray spread that fills the table

The basic table setting was more generous than I expected. A silver tray came out full of various side dishes and dipping sauces, and I liked that it wasn't just a meal of meat but came with lots of accompaniments to enjoy alongside.
Comparing four house sauces: aged soy, black sesame salt, mushroom and angelica
The staff member also showed us the best way to eat it — there were several sauces to pair with the meat, so it was fun to compare them one by one. The seed soy sauce with chives, when dipped generously, wasn't too salty and had a great savory depth that paired well with the clean flavor of the beef.
I tried black sesame salt for the first time too — the nutty black sesame aroma spread subtly, adding to the beef's rich flavor deliciously.

The mushroom sauce added a distinct mushroom umami that was great, and the angelica sauce had a fragrant, deep flavor that really stood out — the most distinctive of them all.
Kimchi and bracken fern also came out, and putting them on top of the meat was another treat — the savory beef combined with the tanginess of the kimchi and the fragrant bracken made for a nice bite. With so many accompaniments, the flavors were varied and I ended up mixing combinations without even realizing it.
Banchan at Jipbul Taebaek, plated one by one

There was a great variety of banchan (side dishes) too. From japchae (glass noodles) topped generously with yellow egg garnish to radish salad, potato salad, green onion kimchi, radish pickles, and yeolmu (young radish) kimchi — all side dishes that paired well with the meat.

The tangy radish pickle and yeolmu especially were good for cleansing the palate after eating meat with a strong straw-fire flavor.

With so many side dishes, we could pile them onto lettuce wraps for a hearty, delicious bite.

If you run low on banchan or lettuce, you can refill at the self bar.
The second grilling that clears the meat off the rib bone
After eating a good amount, the staff came back for a second round, grilling the remaining meat still stuck to the prime rib bone.

With an expert's hands, the meat was cleanly stripped off the bone. The staff member explained that the meat stuck to the bone might have a slightly chewier texture than what we ate first. Trying it, it did have more chew compared to the tender meat from before, which made it even better for tasting the meat's rich, concentrated flavor.

Eating while looking out at the green scenery through the window, I momentarily forgot we were right in the middle of downtown Suwon.

After eating plenty of meat, I was really full, but there was even yogurt ready at the self bar, so I grabbed one at the end. It felt like they took care of everything down to the finish, cleaning up the palate nicely after the meal.

Looking at the autographed photos on the wall, it seems like plenty of celebrities have already stopped by this restaurant.

Final verdict on lunch at Jipbul Taebaek Suwon Ingye Branch
Jipbul Taebaek Suwon Ingye Branch is a place where the naturally tender flavor of prime rib is enhanced by the straw-fire aroma, giving a clearly different smoky taste from ordinary beef. Having the staff grill it for us directly was especially convenient, and with several dipping sauces and various side dishes to pair, it was fun enjoying the meat in many different ways.
The atmosphere of dining while looking out at a green water garden in the middle of the city was also nice, and with menu options ranging from the lunch special to prime rib, it seems like a good spot for either lunch or dinner. A great beef restaurant in Suwon's Ingye-dong to visit when you want quality beef soaked in straw-fire aroma.
