Today I'm bringing you my review of Dokbul Janggun Ilsan Baekseok Branch, which I found while looking for good restaurants near Baekseok Station. This place lets you try a variety of special cuts like kkodeul-sal, bol-hangjeong, and nakyeop-sal, so I ordered the Dokbul72 Aged Jeju Platter 600g, which lets you sample several cuts at once.

When you order, you get house-made mul-kimchi, pepper strip pickles, roasted glasswort salt, hairtail fish sauce, lettuce wraps, fresh wasabi, garlic, ssamjang, kimchi, and scallion strips as basic side dishes~

And here's the thing about Dokbul Janggun — order meat and you get cheonggukjang! This is genuinely a treat ❤️

I'm a cheonggukjang lover, and the broth was savory with big chunks of tofu and radish, so it was totally possible to finish a whole bowl of rice with it!

First I tried kkodeul-sal, which you could call Dokbul Janggun's signature menu item. Just like its name suggests, it's chewy through and through! It was fun to chew and had a lively texture, so I enjoyed it a lot.

Bol-hangjeong: pork cheek and jowl
Next was bol-hangjeong! Bol-hangjeong is a cut where you get cheek meat and jowl (pork neck) meat together~ The hangjeong part has a firm, springy texture. It felt different from the chewiness of kkodeul-sal, so it was fun comparing the cuts as I ate.



Nakyeop-sal: the clean, tender favourite
This time, nakyeop-sal. It's said to be the cut between the shoulder and the loin, and when I actually tried it, it had that distinctive lean-meat cleanness while still being tender to chew, making it easy to eat without feeling heavy. Nakyeop-sal was my number one pick! ❤️ Strongly recommend it if you like lean, low-fat meat.

Hairtail fish sauce, the other standout at Dokbul Janggun
And one more standout was the hairtail fish sauce. Among all the sauces, hairtail fish sauce is my number one pick ❤️ The deep umami distinctive to hairtail fish sauce combines with a spicy kick, and eating it together with crunchy cheongyang peppers cuts through any greasiness perfectly and pairs really well with the meat. It felt different from other Korean BBQ places.

Eating bol-hangjeong and nakyeop-sal together too, I realized each cut had such a different texture that I was glad I ordered the platter! For anyone who loves special cuts, being able to enjoy this variety of textures at once seems to be Dokbul Janggun's real charm.

Overall, Dokbul Janggun Ilsan Baekseok Branch was a Baekseok Station restaurant where it was fun enjoying various special cuts, each with its own texture. Kkodeul-sal was, true to its name, chewy through and through and fun to eat, while bol-hangjeong had an appealing springy, firm texture. Among them, nakyeop-sal was my number one pick!
And personally, what stuck with me almost as much as the meat was the cheonggukjang and hairtail fish sauce. The indoor space also had a beam projector playing music videos and music, plus an outdoor terrace space, so it was a great place to enjoy the atmosphere while eating meat.
