When you take a bite of choux and the cream spreads through your whole mouth with that nutty, rich flavor, there's nothing quite like the good mood it puts you in.
I heard a dessert café specializing in choux (cream puffs) and fruit syrups had opened in Sajik-dong, so I went to check it out. It was FLU:ET, tucked in cozily just in front of Ssangyong Yega.

The small dessert café that opened in Sajik-dong
The shop wasn't big, but it was decorated in a clean, sentimental style. The owner, who greeted us warmly as soon as we walked in, left a good impression too.

They happened to be running a lucky draw event to mark their opening. Might be fun to stop by before the prizes run out.

FLU:ET makes its desserts with French fresh cream and New Zealand butter, and besides the choux, they also sell homemade fruit syrups and ades.
Since I wanted to try one of each kind that day, I packed four to go: tiramisu choux, plain choux, Earl Grey choux, and cream cheese apple choux.

My eldest daughter, who's been working hard preparing for her first midterms, had been saying she was stressed and wanted a dessert that would make her feel good.

The first one we tried was the plain choux.
We split it in half and each took a big bite at the same time — and made eye contact instantly. Whoa.
The cream spread across my whole mouth, and the flavor was surprisingly refined, not too sweet. The combination of the light, plain-tasting choux shell and the soft, rich cream was really good.

My daughter said it was delicious and wanted to move on to the next one quickly, so we started going through them one by one, like checking off a list.
Earl Grey choux with a deep tea aroma
The second was the Earl Grey choux. As soon as we cut it open, we could see the Earl Grey mixed generously into the cream. From the look of it, I already thought this would suit my taste.
Trying it, the Earl Grey flavor wasn't just subtle — it was actually quite strong.

The cream itself was soft, but with that fragrant, slightly bitter Earl Grey flavor added in, this became one I especially liked.

How the cream cheese and apple choux tasted
Third was the cream cheese apple choux. Compared to the other choux, the cream was a bit firmer.
The cream cheese gave it a rich, nutty, heavier flavor, and the tart, sweet apple filling in between matched well.

It felt distinctly different from the ones filled with just soft cream, so eating all four together really highlighted each one's character.
The tiramisu choux we saved for last
And finally, the long-awaited tiramisu choux. The moment we took a bite, my eldest and I locked eyes again. Whoa, this is it.
It was so good it felt almost a shame to eat, to the point where I wanted to tell it not to disappear while I was still eating it. The mascarpone cream and coffee cream flavors were really rich, sweet with a bitter coffee edge, giving it that unmistakable tiramisu taste.

We ate this one last out of the four, but it left the strongest impression. It made me think — so this is how much flavor you can pack into cream inside a choux shell.

After eating all four kinds of choux, I actually got curious about the fruit syrups too. There was a wide variety — tomato basil, orange grapefruit, passion fruit, strawberry — and looking at the drink menu, they seemed like they'd pair nicely with the choux.

If a place can make choux this good, I have fairly high expectations for their homemade fruit syrups too. This time I focused on the choux, so next time I'll have to try the ades as well.

On a day when I was craving cream-filled choux in Sajik-dong, I ended up spending a pretty happy time sharing them one by one with my daughter. In particular, the plain choux, Earl Grey choux, and tiramisu choux were memorable enough to think about again.
