Getting to taste so many different cuts of one cow (jingalbisal, galbisal, bone-in galbi, bufaechae, woo-samgyeop) all at once made comparing the cuts as we ate really fun. Being premium aged raw meat, both the marbling and the color stood out from the start, and after grilling it and taking a bite,

it melted softly in my mouth and burst with rich juices. The hanwoo yukhoe included in the set was also great — the seasoning wasn't overpowering and it was nutty and savory, perfect for whetting the appetite.

Unlimited doenjang jjigae and the self-bar side dishes

The real jackpot point of Hanmaeum Butcher Restaurant is that the doenjang jjigae (soybean paste stew) that comes as a basic side is unlimited refill! With no extra charge at all, you can refill as much as you want of the savory stew, loaded with zucchini, onion, tofu, and more.

Simmering away, bubbling in the middle of the grill the whole time, it really cut through the richness of the meat and was truly satisfying. There's also a neatly organized self-bar off to one side of the store, so you can grab whatever side dishes you need.

The vegetables were all fresh, and the baek-kimchi and pickled chili paired so well with the beef that I lost count of how many times I went back for more.

Finishing the meal with mul-naengmyeon

After the meat, we ordered mul-naengmyeon (cold noodle soup) as well to cleanse the palate and split it between us. The cool, deep broth with floating ice shards, chewy noodles, and crisp cucumber and radish all came together to give a refreshing feeling all the way to the chest. Wrapping a leftover piece of woo-samgyeop or jingalbisal in the noodles and eating it together was truly a fantastic combination!
