A delicious mandu hot pot worth waiting for at Bubyeokjeong Pyeongyang Mandu, Paju Publishing Complex–Heyri Village–Unjeong–Ilsan flagship store.
A mandu hot pot worth waiting for in Paju Unjeong
I went back for my nth visit to Bubyeokjeong Pyeongyang Mandu’s Publishing Complex branch, a truly popular waiting-list restaurant in Paju Unjeong. This time I came for its signature mandu hot pot, and the presentation and flavor immediately made it clear why it is the signature dish! Haha. It is such, such a great restaurant to visit with family, friends, or your partner.
It is the kind of restaurant that always has a wait on weekends because word has really gotten around. Even so, the meal service moves quickly, so you will not be waiting forever—it is worth it, so do not worry too much!

With Bubyeokjeong’s take-home products, you can enjoy the same flavor you get at the restaurant at home. Just boil them simply at home—there is no complicated cooking involved. Enjoy Bubyeokjeong’s mandu conveniently at home for a meal on a busy day, or as an easy spread when guests come over.

They thoughtfully set out free misutgaru (mixed-grain powder drink) and desserts for waiting guests, so the wait was never boring. There was also a separate outdoor waiting area, where I could wait comfortably without feeling crowded or hot.

The spacious interior after about a 30-minute wait
After waiting about 30 minutes, a staff member showed us to our table. Wow... the dining room was so spacious and large, with room between the tables too, so it looked perfect for a relaxed family meal. And of course, it was clean and hygienic!
Since there are so many family groups, the self-service station had all the tableware children might need. You can also conveniently refill the broth for the mandu hot pot there, so just take as much as you need, haha.

All of Bubyeokjeong’s mandu are handmade, and I could actually watch them being shaped in one corner of the restaurant. That made them feel even more trustworthy. This was already my second visit, but every time I come, I still look forward to the food and get excited for it, hehe.

How to enjoy the mandu hot pot
- Once the broth boils, add the vegetables, mandu, and meat, then eat after 2–3 minutes.
- Dip them in hyangsinjang, a fragrant dipping sauce, for a deeper, richer flavor.
- If you need more broth, please refill it conveniently at the self-service station.
- For the kalguksu, set the heat to level 8 and boil until the sand timer runs out, then boil for about one more minute.

Spicy Pyeongyang mandu hot pot and aroŋsatae boiled beef
Since I came to enjoy the signature dishes this time, I had already decided I absolutely had to order the Pyeongyang mandu hot pot, haha. I debated between the mild and spicy versions, then made my choice: the pleasantly spicy one! We ordered Pyeongyang mandu hot pot for two and a half portion of aroŋsatae boiled beef.

A half portion of aroŋsatae boiled beef I ordered again for its tenderness
The half portion of aroŋsatae boiled beef is carefully simmered, tender beef shank enjoyed simply with fragrant chives. I had it last time too, but I could not forget that tender texture, so it was an essential reorder! Eat it with the chives and it practically melts in your mouth... Plus, it is fragrant, nutty, and tender.... If you visit Bubyeokjeong, this is truly a dish you have to order alongside the mandu. Not just the mandu—the meat quality is on another level too!

A generous spicy mandu hot pot made for sharing
The spicy Pyeongyang mandu hot pot is filled generously with mandu and fresh ingredients, making it perfect to share together. Almost everyone who visits Bubyeokjeong orders it, and this time I came specifically to eat this delicious mandu hot pot, haha.

Everyone... the presentation is incredible, right.... They say food that looks good tastes good too, and Bubyeokjeong’s mandu hot pot fit that saying perfectly. There was no way it could not be delicious! Ahh!

Following the guide for enjoying the mandu hot pot, I let it boil well for 2–3 minutes and now it was time to dig in.

I have always, always loved soupy dishes. Bubyeokjeong’s spicy mandu hot pot had a level of heat that even young children could enjoy, so even someone with a low spice tolerance like me could eat it very comfortably.
And the finishing touch has to be these mandu, right?! They were clean-tasting dumplings with no glass noodles, exactly like the light, nutty mandu you eat at home! And what can I even say about the vegetables—they were so, so fresh that I have no idea how many times I said they were delicious while eating, hehe. And of course, we had to finish with kalguksu (knife-cut noodles), right?!

Finishing kalguksu cooked with a sand timer
Each table had a sand timer, which made the waiting time fun too. The mandu wrappers were delicious, so I was already at maximum excitement wondering how good the kalguksu noodles would be!

Wow.... This is the exact kind of kalguksu presentation I really love...ㅠㅠ This is absolutely something you have to tryㅠㅠ If you are visiting Paju, I definitely recommend a visit to Bubyeokjeong. Woohoo!

And that was my nth visit to Bubyeokjeong, Paju’s popular restaurant with a wait. It was so delicious that I spent the entire meal just exclaiming over it. If you are looking for a comfortable restaurant to visit with your parents, I absolutely recommend this place—you can have a wonderfully delicious meal whenever you visit. Highly recommended!
