Tang suddenly wanted makchang, so I quickly looked something up and ended up at this Euljiro 3-ga spot, Baegyeom Makchang! It's got that cool Hipjiro vibe going strong and serves proper makchang, so here's the review right away!

Complimentary salty soft tofu served first

After ordering and waiting a bit, they bring out a salty soft tofu as a complimentary starter before the main dishes arrive! Tried a spoonful — savory and just salty enough to wake up your appetite, the perfect palate cleanser. Also great for lining your stomach before diving in properly! And while we were eating that, the makchang arrived!

Finally, the main event — Daegu makchang! Wow... it was so huge and thick, the visual alone was overwhelming haha

Grilling it the way the restaurant instructs makes it way tastier!

  • 1. Sear it first over high heat — brings out the pre-searing aroma and melts off a bit of surface fat.
  • 2. Once browned, cut into roughly 6mm pieces — thicker cuts are chewier, thinner cuts are more tender! (For extra-thick pieces, slice lengthwise and lay flat to grill.)
  • 3. Flip often, cook slowly — flip frequently to avoid burning and get that crisp-outside, tender-inside finish!
  • 4. Once fully cooked, dip it deep in the makjang — dipped generously in the special makjang mixed with scallions and cheongyang chili, the flavor was insane, T-T

We were eating like maniacs when the doenjang jjigae showed up!

Spicy, salty, and deep in flavor, it cuts right through the richness of the makchang, and a sip of broth followed by a shot of soju has this magic of making the drinks just fly in haha

And no, don't give me that 'drinking on a Monday' nonsense haha. How could you NOT have soju with this makchang-and-jjigae combo
