As summer faded and a cool breeze started blowing, I walked along Jeongdong-gil, which has such a serene, old-town look. Fitting right into that scenery was a restaurant with a subtle, modern vibe that caught my eye! It's Tanbaek, a beef kalguksu (knife-cut noodle soup) specialist that's gaining word-of-mouth fame as a City Hall Station and Deoksugung spot. There are plenty of gomtang-kalguksu places around, but this one really earns the hype... 💕

The exterior really suits the neighborhood's quiet mood. I visited after 1pm on a summer weekday and there was no wait. Most people were eating on the first floor, but the second floor looked usable too — and it's spacious!
The menu board

It's a great stop on the way to or from a walk along the Deoksugung stone wall path or the Seoul Museum of Art, so I'd highly recommend it for a Jeongdong-gil date course or for anyone craving a tidy Korean meal. 😍
An honest menu board at Tanbaek

The name 'Tanbaek' (坦白) apparently means 'to speak plainly, hiding nothing.' Even just from the menu board, I could feel their commitment to using only honest, clean ingredients. The menu is full of tempting options, from the signature gom-kalguksu to yukgaejang-kalguksu, a summer-only bean-paste bibim kalguksu, warm jeyuk (spicy pork), kimchi mandu (dumplings), and an evening-only suyuk jeongol (boiled pork hot pot).
Ordering was super convenient — you just scan the QR code at each table to order and pay.

We wanted to try all of Tanbaek's signature dishes, so we ordered gom-kalguksu, yukgaejang-kalguksu, and kimchi mandu (2 pieces)!
A spacious, atmospheric second floor with tidy interiors
Besides the first-floor space, there's a separate, spacious and comfortable seating area on the second floor too!

Heading upstairs, the overall bright, calm-toned walls paired with black wood tables and chairs gave me the feeling of a modern hanok reinterpreted in a sleek, contemporary way.




From the ceramic pieces on the wall shelves to the soft lighting, everything felt quiet and refined — a very satisfying spot to bring parents or host guests.



Deep umami in the clear gom-kalguksu & rich, spicy yukgaejang-kalguksu

At last, our order arrived in tidy ceramic bowls. Doesn't it look mouthwatering just by looking at it? 😍

Gom-kalguksu (₩14,000)
Tanbaek's signature dish — noodles boiled in broth, rinsed in cold water, then rewarmed with a clear Korean beef broth, following the traditional torom method. The clear, clean broth is topped evenly with tender Korean beef shank and beef brisket, scallions, and shredded red pepper. One spoonful and it's not the taste of artificial seasoning at all — it's the clear, deep umami of the beef itself, filling your mouth. The noodles were chewy yet soft going down — a plain but refined bowl that anyone, young or old, would love.

Yukgaejang-kalguksu (₩15,000)
A spicy, tangy kalguksu made by simmering blanched bracken fern and plenty of green onion in a clear Korean beef broth. The red broth is striking, but the heat isn't the sharp burn of capsaicin — instead, the rich meaty broth mingles with the sweetness of the vegetable stock for a deep, satisfying spiciness that really hits the spot. After finishing the noodles, adding mushroom rice to soak up the leftover broth would probably be a delicacy too.
If you want something cleaner, go for the gom-kalguksu — my friend and I actually preferred the yukgaejang-kalguksu. There's a taste you can only get here haha. Delicious.
A hearty specialty: Seoul-style kimchi dumplings
You can't skip the kimchi mandu (dumplings, 2 pieces ₩5,000), which pairs perfectly with kalguksu. Inside the glossy, thin, chewy dumpling skin is a generous filling of spicy, crunchy kimchi.

The spicy kimchi juice that seeps out with every bite paired amazingly with the plain, clean flavor of the gom-kalguksu. It felt like the perfect side when just the noodles alone leave you wanting a little more... ❤️
Tanbaek on Jeongdong-gil: recommended for days like this
Tanbaek on Jeongdong-gil!! Tired of overly intense flavors these days, I really enjoyed a satisfying meal thanks to the deep, carefully made Korean beef broth and a neat plate of dumplings. The second floor is spacious and clean, making it the perfect place for a relaxed meal after a walk along Jeongdong-gil or an outing to Deoksugung.
