On days when I crave something spicy, I don't just want heat — I want good meat with a rich, savory sauce behind it. That's what brought me to Jimidang Ilsan Main Branch, a Goyang favorite. It started in 2018 in a small space in Baekseok-dong and has stuck to one menu — spicy braised pork ribs — ever since. The sign at the entrance reading something like "a restaurant with a keen sense of taste" already gave off a certain confidence. This time we ordered the 2-person set, perfect for sharing, with a well-rounded spread of main, rice, and pancake.

Ji.mi.dang — the sign grabs your attention right away. As a restaurant specializing in spicy braised ribs, the pride in their single menu item was obvious. Jimidang says its policy of selling only 100 servings a day is to guarantee good ingredients, their own handmade sauce, and fresh food.

Rather than a restaurant that a hundred customers visit once, we want to be one that one customer visits a hundred times.

That line was posted inside the restaurant, and it left an impression — the mindset of building lasting regulars rather than chasing a fleeting trend. Also, about 5 cars can park on the side road in front of the store, and if it's full, staff will help direct parking, so keep that in mind if you're driving.

Inside Jimidang: good for families and group dinners?

The interior uses wood elements for a warm, comfortable atmosphere. Rather than being overly decorated, it's a clean space that lets you focus on the food. It's comfortable for family meals, and works just as well for couples' dates, friend gatherings, or work dinners. Each table also has a tablet for checking the menu and ordering easily, which is why families with kids seem to visit a lot.

On one wall hangs a photo of the owner with the suppliers who provide the ingredients. It gave a real sense of honesty and pride in using good ingredients without cutting corners, which made me trust the place more.

Jimidang has also been featured on TV — on SBS's Live Today's Big Data Restaurants (March 29, 2024) and on an episode of Lonely Old-Timer's Spicy Braised Ribs (April 9, 2024). The fact that they've focused on just this one dish, spicy braised ribs, for so long in one location was impressive, and combined with good meat, a homemade sauce, and the 100-servings-a-day policy, you could really feel their dedication to the food.

On the table, thoughtful extras like dental floss, hand sanitizer, a fan, and hair ties were all ready to use.

The core of Jimidang's spicy braised ribs is, of course, the meat. They use the top-tier Bellota grade of Spanish Iberico Duroc. Iberico is well known for its rich marbling and savory flavor, and famously the pigs are raised roaming freely, eating acorns and various plants. That means moist muscle and abundant fat, so when cooked well you get a tender texture and rich juiciness — and the presence of the meat came through clearly even under the spicy sauce.

You can't have spicy food without cool dongchimi (watery radish kimchi). One sip of the cold, clean broth resets your palate completely. Eat some ribs, sip dongchimi, go back to the ribs — an endless loop begins. The pickled radish that came with it was crunchy and refreshing too, good to nibble on in between bites. Rather than piling on lots of side dishes for show, it felt like just the right accompaniments to the spicy braised ribs.

Another dish that stole the spotlight next to the braised ribs was the Bongpyeong buckwheat pancake. It's made with buckwheat flour from Bongpyeong in Pyeongchang, Gangwon Province, using batter aged for 12 hours. Most striking is the size — about 36cm! It comes out big enough to nearly cover the whole plate, so at first sight you think, "wait, this comes with the set?" Thinly fried, the edges are slightly crisp while the center stays moist and chewy. Thanks to the clean, nutty buckwheat aroma, it paired really well with the spicy ribs. Take a bite of spicy rib, then a bite of pancake, and the heat softens naturally — so you end up alternating between the two the whole meal.

Those who love heat can go all out, and those who are sensitive to spice can dial it back, so it works well for a group with different tolerances. The sauce isn't the kind that just numbs your tongue — it's spicy but deep, with a real savory kick. Mixing the bean sprouts and shredded scallions into the sauce added crunch, and I couldn't put my chopsticks down.

How big are the ribs at Jimidang?

When I picked up one rib with the tongs... wow, the size alone was impressive. The thick spicy sauce clung to the big rib, and there was a good amount of meat on it, making it fun to eat. Slow-cooked until tender, it wasn't tough at all — soft and moist, and with each bite the savory flavor of the meat mingled with the spicy signature sauce. The owner even kindly explained an easy way to debone the ribs. With the refreshing crunch of bean sprouts added in, it was hard to stop eating even though it was spicy. That "it's so spicy~" and then reaching for another piece anyway — that's exactly the flavor. I could see why people keep coming back for Goyang's spicy braised ribs.

Personally, the dish I liked just as much as the spicy braised ribs was the kettle-cooked gondre rice. The gondre (thistle greens) is supplied by the Samtaesan Farming Association in Jecheon, North Chungcheong Province. It's cooked in a traditional kettle made by a craftsman, and finished with perilla oil produced at Goam Mill in Jecheon for extra fragrance.

Scooping up a big spoonful, the rice was packed with gondre and smelled deeply savory. The soft gondre blends with the rice, and the subtle nuttiness of the perilla oil follows right after — delicious on its own, but adding a bit of the spicy rib sauce turns it into something else entirely. The combination of rich sauce and clean, mild gondre rice was really good. Even back home, the scent of gondre rice and perilla oil lingered.

Is Jimidang's 2-person set worth it?

This 2-person set was really well-rounded: bold, savory Iberico spicy braised ribs, a huge, clean-tasting 36cm buckwheat pancake, fragrant and nutty kettle-cooked gondre rice, plus cool dongchimi and pickled radish. Tearing into the big ribs with your hands added to the fun, and overall it left me with a strong sense of having eaten a proper, filling meal.

If you're looking for a good restaurant in Goyang or Baekseok-dong, or specifically a braised rib place, or just want to blow off steam with something spicy, Jimidang Ilsan Main Branch's spicy braised ribs are worth trying. It's a versatile spot for family meals, dates, friend get-togethers, or work dinners. It's also close to the Ilsan IC, so it's convenient if you're driving.
