Ganghan Sushi Cheonan Buldang Branch is a Japanese sushi restaurant in Buldang-dong, Cheonan, well suited to eating a sushi set alone. The 12-piece omakase sushi set came with cold soba on the side, and everything from the halibut fin sushi eaten with washed aged kimchi (mugeunji) to the uni and monkfish liver gunkan was satisfying. A Buldang-dong sushi restaurant that works for solo diners
Ganghan Sushi Cheonan Buldang Branch is located on the first floor of First Plaza! Situated in Sinbuldang, Ganghan Sushi looks clean and tidy from the outside.
Inside there are two 4-person tables and four 2-person tables. I went to eat solo too, and there were really~ a lot of solo diners!!

The best sushi sets are Ganghan Sushi (₩14,000), Ganghan Special Sushi (₩17,000), and Omakase Sushi (₩23,000)~ There are also various other options like 6-piece and 2-piece sets. As a sushi specialty restaurant, they have not only diverse sushi sets but also plenty of hearty rice bowl dishes.

What comes in the 12-piece omakase sushi set with cold soba
Omakase Sushi (₩23,000)
I wanted cool soba with my omakase sushi so I swapped it to cold soba! I changed it to soba but by mistake(?) they also gave me the regular udon too haha


First up, miso soup and seafood croquette, yum~~ The croquette is totally crispy and delicious haha
It's 12 pieces so the portion is the same as one serving, but the sushi lineup is luxurious and amazing!! It's made up entirely of top-grade sushi haha
Halibut fin and fresh salmon sushi at Ganghan Sushi
First we start with the white fish sushi!! It's halibut sushi made using extra-large halibut over 3kg from Wando.
This is halibut fin sushi. It's got a lot of fat so the savory flavor and distinctive crunchy texture are ㅠ art!!! ㅠ I topped one with washed aged kimchi~

My favorite salmon sushi is made from top-grade 7kg superior grade fresh salmon! The salmon was in such good condition that I ate one without the onion sauce haha

Tuna sushi~ This is the inner meat of premium honmaguro over 200kg! Doesn't the bright red color look so delicious?

Tuna belly sushi! It's swordfish belly with subtle marbling. The more you chew, the more the fatty richness and chewy texture shine ㅠㅠ Okay, now the second half is the sushi with stronger seasoning haha


Fresh uni piled generously on top of chewy sweet shrimp. The rich sweetness of the shrimp blends with the creamy, deep ocean flavor of the uni, and it was genuinely so delicious!!!! Uni is the best ㅠ absolutely amazing

House-made soy-marinated shrimp aged carefully for 24 hours. I was worried it might be too salty so I saved it for last, but the seasoning was just right and the shrimp was plump and firm~
Anyone who likes gamtae (dried seaweed flakes)~ gamtae is everything. It's a fragrant gamtae and fresh raw beef tartare gunkan. Do I even need to say how well gamtae pairs with raw fish haha


Soft abalone sushi eaten together with rich, savory abalone innard sauce. I love this kind of briny organ dish, and eating them together doubled the flavor.

And of course this monkfish liver gunkan? Totally my style~ It's packed full of monkfish liver, called the foie gras of the sea. Soft and insanely savory ㅠ
The last one is eel sushi with plenty of smoky char. It chews soft with no small bones, sweet and salty, a perfect finale.

How the cold soba and washed aged kimchi pair with the sushi
Cold soba with a lightly icy tsuyu broth, grated radish, and savory toppings. It wasn't salty or overpowering, the seasoning was just right. It was a broth that brought out the flavor of the sushi even more. The buckwheat noodles were cooked well without going mushy, keeping a chewy texture!
But eating alone ㅠ the portion was way too much so I left most of it. The udon alone would have been enough.
And you know how at conveyor belt sushi places you occasionally get aged kimchi sushi in between? Since they give you washed aged kimchi here, I ended up eating this more than the pickled radish, more than expected lol. Aged kimchi really was the master stroke!
